Banana Custard

When I first stumbled upon Gena’s blog post about banana soft serve, I was immediately intrigued. After creating the creamy concoction by simply whirring up frozen bananas in a food processor, I was overjoyed! The result was a creamy, cold and delicious bowl of soft serve that exploded with the sweet flavor of banana.

Though banana soft serve is delicious on its own, it doesn’t have much staying power in my belly and I am often left feeling hungry within an hour of eating it.

Last night when I received my new food processor in the mail, I knew I wanted to break it in this morning. I figured banana soft serve would be a great way to do this, but I wanted to add a little protein to the mix to give the creamy concoction more staying power.

Enter: Banana custard.

To make the banana custard, I combined one cup of frozen Greek yogurt that I lightly thawed in the microwave with one chopped frozen banana, a bit of water (to get everything movin’) and one teaspoon of Bob’s Red Mill xanthan gum for thickness. (You may wish to add a bit of sweetener, depending on taste.)

After whirring away in the food processor for a couple of minutes, I had creamy bowl of high-protein banana custard.

Since chocolate makes everything better, I dusted the custard with cocoa powder before digging in.

Not to toot my own horn (toot, toot), but this stuff was pretty darn delicious. I could have easily eaten twice (err, five times?) the amount. 😉

I enjoyed my custard with a thick slice of Amish Friendship Bread.

Those of you who have tried Amish Friendship Bread before and commented on my post last night weren’t kidding… it really is ridiculously addicting. I think I ate my body weight in this stuff last night!

  1. Ahh that looks AMAZING! I love Gena’s soft serve, but only as a snack – it doesn’t keep me full for too long, as you mention, but you totally pimped it out with some protein…sweeeet!

    I love soft serve. As a child my Dad and I ALWAYS got McDonalds soft serve, or a McFlurry (with Oreo’s, please!)

  2. Oh.my.gosh.wow – that looks SO GOOD!!!! I will be trying this ASAP 🙂 I’ve made it without the Greek yogurt before and it’s delish but I love the added protein idea to make it a meal. YUM YUM! And I’d TOTALLY have it for breakfast too!! 🙂

  3. Soft serve all the way! I have a love affair with frozen yogurt. The creaminess and texture of it make me swoon 🙂 I’m thinking of trying a frozen banana, strawberry and yogurt soft serve soon!

  4. Here’s the thing, when it comes to any form of frozen goodness, I don’t discriminate. Give me soft serve, give me real ice cream, give me soy ice cream (which is actually really good), I’ll eat them all!! 🙂

  7. I am not really an ice cream fan overall, but I love banana soft serve. I have been eating it with greek yogurt for months and it is delicious! I also melted peanut butter and add it on top.

  8. That looks delicious! I’ve heard a lot of xanthan gum lately. Do you just buy it at a place like Whole Foods or do you need to go online?

    • i actually found it at my local grocery store (publix) in the organic food aisle, but whole foods has it too!

  14. I love frozen yogurt of any kind. If it is low calorie and fat free, then some one help me! We have a new self serve fro yo place here in Columbia, SC called Yoghut. Their House Tart and low sugar Chocolate are my favorites.   15. This is a tough one, I love both. It depends on what I’m craving at the moment. Recently, I’ve been enjoying cake batter ice cream with Heath bar crumbles at Cold Stone. That’s a bunch of yummy goodness 🙂

  16. I absolutely love banana soft serve (it’s one of the things I miss the most about not having my own kitchen right now…) But, you are right that it doesn’t have much staying power. I usually add scoop of PB, but I’m for sure trying out the yogurt as soon as possible! I like ice cream of any type, but my one requirement is that it has to have some crunch! I’m a texture freak!

    Soft serve vs. ice cream – usually depends on my mood, but I’d say 85% of the time it’s soft serve. But always 100% with rainbow sprinkles. 😛

    I’m all for ice cream or gelato. Soft serve/fro yo is much too soft and melts too quickly for me. I just end up throwing it away when it melts…

  22. I might have to try that tonight… I haven’t made that banana soft serve yet because I thought the same thing about it not lasting long and being too much sugar except for a post-workout meal.

    Love love love soft serve. When I eat regular ice cream, I usually wait until it’s a little melty before I eat it (although, to be honest, I’m perfectly happy to eat anything cold and sweet). 🙂

    does the xanthan gum add/change the mix nutritionally, or is it just more of just a physical properties change? I guess i should do a little research on this… I am so intrigued with the product, after seeing it peak in use on a lot of blogs!

  25. Oooh, that looks good! (Not as good as the Amish Friendship bread, sorry.) I am a self-proclaimed dessert fiend but I don’t like ice cream. Weird, I know. So I’d say soft serve but only if it’s fro-yo and only a kid’s size.

  28. I loooooove Ice Cream. I used to be softserve all the way, but more recent years have fostered my love of cold, hard ice cream. Mint chocolate chip and cookies and cream are definitely my favorites. I love all over flavor as opposed to vanilla with toppings or mix-ins.

    Anyway, now that I’ve made my love of ice cream evident, I would love to try the Amish Friendship bread! looks so delicious!

  29. Loaded banana custard is a great idea. I too was starving after just whipping up the soft serve. I love a dollop of whip cream on top, or squishing it between english muffins is a lovely Sat morning breakfast.

  33. tough question…. i’m usually more of a frozen yogurt girl (my fave dessert at the moment is strawberry-rhubarb fro yo – http://bit.ly/9NlcX6), which i leave in the freezer for about 3-4 hours so it’s quite frozen on the outside, but still a little creamy inside. your soft serve looks great!

  40. when i run a lot and burn more than let’s say, 600 calories/day, ice cream all the way!! if not, like for an everyday treat/breakfast choice then it would be soft serve or froyo
