Banana Custard

When I first stumbled upon Gena’s blog post about banana soft serve, I was immediately intrigued. After creating the creamy concoction by simply whirring up frozen bananas in a food processor, I was overjoyed! The result was a creamy, cold and delicious bowl of soft serve that exploded with the sweet flavor of banana.

Though banana soft serve is delicious on its own, it doesn’t have much staying power in my belly and I am often left feeling hungry within an hour of eating it.

Last night when I received my new food processor in the mail, I knew I wanted to break it in this morning. I figured banana soft serve would be a great way to do this, but I wanted to add a little protein to the mix to give the creamy concoction more staying power.

Enter: Banana custard.

Banana Custard

To make the banana custard, I combined one cup of frozen Greek yogurt that I lightly thawed in the microwave with one chopped frozen banana, a bit of water (to get everything movin’) and one teaspoon of Bob’s Red Mill xanthan gum for thickness. (You may wish to add a bit of sweetener, depending on taste.)

After whirring away in the food processor for a couple of minutes, I had creamy bowl of high-protein banana custard.

Since chocolate makes everything better, I dusted the custard with cocoa powder before digging in.

Kinda Like Dessert for Breakfast... But Healthy!

Oh-So-Thick

Not to toot my own horn (toot, toot), but this stuff was pretty darn delicious. I could have easily eaten twice (err, five times?) the amount. ๐Ÿ˜‰

I enjoyed my custard with a thick slice of Amish Friendship Bread.

Breakfast

Those of you who have tried Amish Friendship Bread before and commented on my post last night weren’t kidding… it really is ridiculously addicting. I think I ate my body weight in this stuff last night!

Question of the Morning

Do you prefer soft serve or regular ice cream?

Looks Like the 4th of July

Judging by my breakfast, it looks like the 4th of July came a bit early!

Red, White, Blue

“It makes me want a hot dog reeeeal bad!” ๐Ÿ˜‰

(Love that movie.)

Today’s red, white and blue concoction was quite patriotic and tasted great to boot! Definitely a winner in my book.

Patriotic Parfait

My patriotic parfait was inspired by Angela. I created this breakfast treat by layering strawberry banana “soft serve“, Oikos vanilla Greek yogurt and a handful of blueberries several times until my fancy-dancy wine glass was filled to the brim.

Summer Treat

I created the “soft serve” by blending a frozen banana (broken into chunks) with a handful of frozen strawberries and a bit of cold water to get everything to move around a bit.

I would highly recommend doing this in a food processor if you have one. That was my original plan (see photo below), but when I plugged in my Cuisinart food processor, it decided to be moody and didn’t work. ๐Ÿ˜ฆ I’ve probably used this food processor less than 10 times, so I was pretty bummed that it already wasn’t working.

The Original Plan...

Fortunately my blender did the trick (I use an old Krups blender that I love), but I had to add a bit of water and it took a bit longer to get the soft serve smooth and creamy than it would have had I used a food processor.

Even without the food processor, this breakfast turned out quite tasty.

Sadie clearly agreed.

Another Sadie Picture for Good Measure

All this red, white and blue talk has me awfully excited for the 4th of July!

My family, Ryan and I have plans to head to the Florida Keys for a long weekend of scuba diving over the 4th. I can’t wait!!!

Question of the Day

  • What are your 4th of July plans?
  • What is your favorite red food?

My favorite red food is red velvet soft serve. ๐Ÿ˜€

Dinner Guests

Tonight we had guests for dinner… my parents!ย ย

Me and my Parents (and Sadie)

Ryan, Me & the Pup

They stopped by our apartment en route to St. Pete from Jacksonville and we enjoyed a tasty dinner of slow cookerย chicken tacos.

Taco Toppers

My Taco Plate

I inhaled these tacos and went back for another plate full of taco salad.

Do you prefer hard shell or soft shell tacos?

I’m a hard shell girl… but I feel like I’m in the minority on that one. ๐Ÿ˜‰ I stand by my hard shells!

After hanging out and catching up, my parents left and Ryan and I took Sadie on a short one mile walk around the neighborhood.

After our walk I enjoyed a tasty dessert of banana soft serve with chocolate chips.

Ryan and I are enjoying the rest of the night being homebodies. I honestly love Friday nights at home with Ryan and Sadie. They’re my favorite.

See ya in the morning!

Cauliflower Pizza Crust

A pizza crust made with cauliflower? This can’t taste good… but it DOES!

Magic, I’m tellin’ ya.

Ryan and I tried this recipe several months ago and were amazed at how fantastic the crust turned out.

We decided to spend our Friday night in, eatin’ pizza, staying warm and messing with Sadie. ๐Ÿ˜‰ (Maybe those lingering Christmas decorations will come down tonight…)

Ryan and Lil' Miss Sadie

To make the cauliflower pizza crust, we first riced cooked cauliflower in the food processor that I got for Christmas (thanks Mama!) until we had one cup of the prepped veggie.

Cauliflower

We then added an egg and a cup of light mozzarella cheese to the cauliflower and mixed it until the ingredients formed a “dough.”

Pizza "Dough"

After pressing it onto a baking sheet sprayed with cooking spray and sprinkling the dough with spices, we baked it at 450 degrees for about 15 minutes.

Pre-Cooked Crust

Ready for Toppings

We then took the crust out and topped it with the pizza toppings of our choice (lots o’ veggies puh-lease!). We stuck the crust back into the oven, placing it under the broiler until the cheese melted.

Topping His Half of the Pie

Pizza, Pizza

It smelled fantastic.

We split the pizza in half and dug in. Bon appetit!

Dessert

For dessert we split two little bowls of banana soft serve (just frozen bananas blended for a while in the food processor)… one plain banana and one chocolate banana. Can you guess which one I enjoyed more?

Answer: Chocolate. Always chocolate.
