Copy Cat Quiche, Kind Of

Those of you who have been following the blog for a little while now know how much I love breakfast for dinner (as evidenced here, here and here).

Tonight seemed like a great night to enjoy eggs in the evening, so I figured I’d try making my first-ever quiche!

Broccoli and Spinach Egg White Quiche

I was inspired to make the quiche when I saw Tina’s post on Tuesday. She basically followed this recipe by Rachael Ray, which sounded really easy and looked amazingly delicious.

I changed the recipe quite a bit, but the results were still fabulous! It was a copy cat quiche… kind of. šŸ˜‰

The recipe below includes my alterations.

Broccoli and Spinach Egg White Quiche

Ingredients:

  • ThreeĀ whole wheat tortillas
  • 1 1/2 c. chopped broccoli florets
  • 2 tablespoons extra-virgin olive oil
  • 1/2 onion, chopped
  • 2 c. chopped fresh spinach
  • Salt and pepper
  • 1/2 c. shredded cheese of your choice
  • 6 egg whites
  • 1/2 cupĀ Greek yogurtĀ 
  • Directions:

  • Preheat the oven to 375Ā°. In a greased 9-inch pie plate, overlap the tortillas to make a crust; place on a rimmed baking sheet. Meanwhile, steam broccoli and until crisp-tender, aboutĀ 2 1/2Ā minutes.
  • Add the olive oil to a skilletĀ and heat over medium-high heat. Add the onion and spinach, season with salt and pepper and cook until theĀ onions are transparent, about 3 minutes. Stir in the broccoli; season with salt and pepper. Spread evenly in the tortilla crust,Ā and add shredded cheese on top.
  • Veggies + Cheese

  • In a medium bowl, whisk together the egg whitesĀ and yogurt and season with salt and pepper; pour into the tortilla crust. Bake on the baking sheet until just set in the center and lightly golden, about 30 minutes. Let rest for about 10 minutes before serving.

    The addition of the Greek yogurt to the egg whites really made this quiche taste like at thick egg casserole.

    In Ryan’s words, it tasted “quichey,” which he assured me was a good thing. šŸ˜€

    Today’s lunch was a PB & J re-re-re-remix! Since I do not have any jelly in my apartment and I polished off my beloved apple butter weeks ago, I had to get creative to settle my peanut butter and jelly sandwich craving for lunch today.

    To create my pb & j remix, I subbed out the bread in favor of a Tam-x-ico’s whole wheat tortilla to make a roll-up.

    Fortunately the amazing people at Barney Butter sent me a delicious lil’ packet of almond butter that served at the nutty spread in my revised PB & J.

    This almond butter is so tasty! I bet I could eat an entire bowl full of it without a problem (though my thighs might disagree šŸ˜‰ ).

    In place of jelly, I used REAL fruit. Who would’ve thought!? I used frozen raspberries that I let thaw to add the sweetness normal jelly provides in a traditional PB & J sandwich.

    The bad boy did not disappoint. Though my PB & J sandwich was more of a AB & R roll up, I enjoyed every last bite.

    What is your favorite kind of nut butter?

    I am dying to try pumpkin seed butter, but haven’t had a chance to yet. Whole Foods has a machine that cranks out honey roasted peanut butter that is unbelievable!

    Okay, all this nut butter talk is a little too much for a peanut butter lover like me… I’m officially salivating and I just finished lunch!

    My lunchtime pizza, though made in the microwave, tasted muy gourmet and I owe it all to the strong flavor of goat cheese.

    I made the pizza using a Tam-x-cio’s wheat tortilla as the crust.

    I topped the tortilla with tomato basil marinara sauce, a heavy sprinkling of creamy goat cheese crumbles, chopped roasted brussels sprouts and fresh spinach.

    I microwaved it for 45 seconds and had a tasty gourmet-tasting pizza in no time at all!

    My wonderful boyfriend sent me the most gorgeous bouquet of two dozen red roses in a wonderful vase. I am seriously obsessed with the vase. When I called Ryan to gush about my flowers, I couldn’t stop talking about the vase and he was like “Dang! Maybe next time I’ll just buy you the vase!” I must say the flowers are quite beautiful, too. šŸ˜‰

    The flowers were sent to kick off a secret date Ryan has planned for us tomorrow. Ryan and I take turns planning a special date for each other every other month and October is his month. I can’t wait to see what he has in store!

    Now for my regular lunchtime update!

    I began by gathering the ingredients for a simple chicken salad using an apple, fall’s favorite fruit.

    Canned white meat chicken, a crisp Granny Smith apple and light Miracle Whip are the only three ingredients I use to make this yummy salad.

    First I drained the chicken and let Sadie lick the can.

    I then chopped the tart Granny Smith apple into large chunks and squirted about a tablespoon of Miracle whip in with the chicken.

    After stirring the three ingredients, my chicken salad was ready to go!

    I spread the chicken on a Tam-x-ico’s low carb wheat tortilla with broccoli slaw and shredded lettuce. (These tortillas are by far the best tortillas I’ve ever had.)

    Ewww that’s kitty chow,” my friend Michaela would say anytime I had a tuna salad sandwich for lunch back in elementary school. Cats do love a good can of tuna and so do I!

    The last time four-packs of canned tuna were on sale at the grocery store I stocked up and last night I realized I have one too many cans of this fish in my apartment. That made today’s lunch an easy decision.

    I made the tuna salad with a big ol’ squirt of light Miracle Whip and two large spoonfuls of sugar-free relish. After slicing a juicy plum tomato and scooping the tuna salad onto a toasted Alternative sweet wheat bagel, my lunch was ready.

    Eating tuna salad takes me back to the days when I’d have to defend my choice of sandwich against the mob of peanut butter and jellies that would surround me at the school lunch table. Ah, memories.

    My morning snack choice was definitely less stinky.

    I made an apple quesadilla by melting light Babybel cheese on a whole wheat tortilla and topping it with warm Granny Smith apple slices.
