Wedding Cake & Finding Nemo

Last night our friend Dru came over to our new apartment and told us a story about a wedding he attended this past weekend. Apparently the cake fell over. Yikes!

I think this story made me fall asleep with wedding cake on the brain because I had one straaaange dream.

I dreamt that I left all the wedding cake details up to Ryan. Then, on our big day, I walked into the reception room to look at the cake and he ordered a Finding Nemo cake! Ah!

Oddly enough, I wasn’t the least bit upset about the Nemo cake in my dream.

When I told Ryan about my dream this morning, his response was, “Well, did it taste good?”

Run, Run, Run

After dreaming eventful dreams, I woke up ready to run with the pups!

I took Sadie on a 50 minute run. The weather outside was a little chilly at first, but ended up being the perfect running temperature.

Sadie, yet again, made me feel extremely unathletic this morning. When we returned from our 50 minute run, I let her out back and this is what occurred:

I was cravin’ a cinnamony breakfast this morning, so I prepared an apple cinnamon ricotta wrap featuring a huge Pink Lady apple.

At Long Last

At long last my leftover lunch arrived!

Hooray for tasty leftovers! I felt like I was reliving St. Patrick’s Day in my lil’ cube.

I used leftover corned beef and cabbage to make a tasty wrap.

I spread a little light Miracle Whip on a whole wheat tortilla to add a little moisture to the roll up.

For dessert I had a small slice of chocolate cake that was served in honor of a coworker’s birthday.

For as much as I love chocolate, I think I prefer vanilla cake with chocolate icing to chocolate cake with vanilla icing. Still, that didn’t stop me from enjoying every last bite of this cake… and licking the remaining icing of the plate. πŸ˜‰

School Lunches

If I didn’t pack my lunch or go off campus for lunch in high school, I ate the same thing almost every day: a plain bagel with strawberry cream cheese.

Thankfully my friends and I would often leave school at lunchtime and rotate houses and ransack our family’s kitchens, so I didn’t eat on campus all that often my senior year. Before that, however, the bagel and cream cheese combo was my go-to meal.

My friend Katie sent me a really interesting article yesterday about a teacher who vowed to each school lunches every day.

She’s anonymously documenting her lunches and opinions about the food on her blog Fed Up with Lunch: The School Lunch Project.

The pictures she posted of her lunches look eerily familiar to the school lunches I remember.

I think this woman’s documentation about what children today are fed in school is wonderful and will hopefully open the eyes of some influential people to make positive changes to the meals served to children at school every day.

Chocolate Peanut Butter Breakfast

This morning while I wasΒ  ellipticizing (that’s Julie-speak for working out on the elliptical) at the gym, I flipped through the December Food Network magazine that my friend Minda gave me at our girl’s holiday movie night on Tuesday.

I saw a recipe for chocolate peanut butter cookies and a craving was born!

I honored my desire for chocolate and peanut butter with a healthy breakfast wrap featuring peanut butter and cottage cheese mixed with sweetener and lots of cocoa powder.

This wrap was d-to-the-e-to-the-l-i-c-i-o-u-s (can you tell I was listening to the Black Eyed Peas this morning?). If you’re cottage cheese averse, try adding a little sweetener and some cinnamon or cocoa powder to the curds. It totally changes the flavor.

Side note: I think the word “curd” might be in the top five of my list of disgusting words. (Other top contenders include slop and panties.)

Pump it Up!

BodyPump was awesome this morning. I feel like I’m getting some of my strength back from my week off of weight training over Thanksgiving. My biceps and hamstrings were a-burnin’ today! I rounded out my workout with 25 minutes of light cardio on the elliptical with Food Network magazine.

The December issue features 50 (yes 50!) recipes for Christmas cookies! I can’t wait to make some. I’m going to a Christmas cookie exchange on Dec. 20 and am already excited!
