Oh My Wafer

Yesterday when shopping at T.J. Maxx for a couple of things for our new apartment (I scored an awesome rug for $20!), I naturally found myself spending way too much time in the gourmet food aisle.

Is anyone else out there a sucker for the awesome foodie items at places like T.J. Maxx and Marshall’s?

I can’t get enough! I love trying new items I find on sale in the food aisle and yesterday I came home with Carlsbad Oblaten original vanilla almond wafer cookies.

Carlsbad Oblaten Wafers

I bought them for $3, but online they sell for nearly $10 a tin!

Original Vanilla Almond Wafers

I cannot believe how flippin’ delicious these wafers are!

I ate about a billion yesterday, but managed to save a couple wafers for dippin’ in my Greek yogurt after lunch today.

Wafer Cookies + Greek Yogurt

I think I plowed through my lunch just to get to this “dessert.” 😉

Lunch

Lunch today was an old favorite.

Tuna Salad with Sweet Corn

Tuna salad!

I enjoyed my tuna salad on top of a bed of romaine lettuce.

Lunch

I love how a can of tuna packs such a huge protein punch.

…Aaaand I’m off to prepare for a meeting. See ya fo’ dinn-ah!

Kitty Chow

I think people who hate canned tuna really hate canned tuna. It’s not generally something they’re on the fence about.

Personally, I love canned tuna and would eat a tuna salad sandwich for lunch regularly in high school. My best friend Michaela always said I was eating “kitty chow.” 🙂

Cats ❤ Tuna

Sure it’s staaanky, but I think it’s delicious!

Are you a canned tuna lover or hater?

Clearly I’m a canned tuna love-ah!

Lunch

Surprise, surprise!

My lunch today was a tuna salad wrap.

Canned Tuna

My tuna salad contained one can of tuna, light Miracle Whip, mustard, relish and sweet corn.

Tuna Salad

After wrapping the tuna salad in a whole wheat wrap, I dug in!

Carrot sticks were served on the side.

Save the Dates

Remember waaay back when I asked you guys about the proper amount of time to wait before sending out save the date cards?

Well, I still haven’t even started making ours, but my goal is to send them out six months in advance, so I still have a little bit of time to get my act together.

I love being crafty, so I think Ryan and I may be sending out DIY save the dates with a bit of a personal touch. I’m not sure if making our own save the dates will be too overwhelming, so we’ll see!

If you are married, what were your save the dates like?

(Note: Please do not share your save the date idea if you don’t want me to steal it. 😉 )

Beanie Weenies

One of Ryan’s favorite meals is beanie weenies.

Not familiar with beanie weenies? It’s a fancy and fun lil’ name for the traditional franks ‘n’ beans dish!

Beanie Weenies

Baked beans with chopped-up hot dogs really is a delicious one-bowl meal. Ryan introduced me to the yumminess and I’m quite a fan.

What’s your favorite way to enjoy baked beans?

I like ’em best on top of a grilled hot dog filled with lots of veggies and condiments. YUM.

Lunch

Though I didn’t have beanie weenies for lunch today, I did enjoy beans!

I made tuna salad using light Miracle Whip, relish and mustard and stirred in a bunch of kidney beans.

I plopped the mix on top of shredded lettuce and dug in!

Tuesday's Lunch

It was good… not beanie weenies good, but still quite delish, not to mention much more nutritious.

Back to work… lots on the to do list today!

Sure… Throw That In, Too!

That was my motto when creating my lunch today.

I knew I wanted tuna salad, but I also wanted chickpeas and sweet corn. What’s a girl to do?

Throw them all into the salad and hope for the best, of course!

Tuna Salad

Today’s tuna salad included:

  • Tuna
  • Light Miracle Whip
  • Dijon mustard
  • Relish
  • Sweet corn
  • Chickpeas
  • Sliced baby carrots

I also enjoyed a snack sized baggie of carrots on the side.

Monday's Lunch

I wasn’t sure how I’d like my random ingredient tuna salad since I generally limit tuna salad to the fish, mayo, mustard, relish, celery and onion. Fortunately this was an experiment that turned out really well. Everything tasted great and I got to enjoy all the foods I was craving.

Well… almost everything I was craving. Chocolate didn’t make the cut, but including chocolate chips in the tuna salad would be barf-inducing, I believe.

What little extras do you include in tuna or chicken salad?

I love adding in fun foods and flavors to kick tuna or chicken salad up a notch. I’d love some creative suggestions!

“Heeere Fishy, Fishy, Fishy”

Name that movie!

It’s Deuce Bigalow – a classic, obviously. 😉

My lunch today was quite fishy!

Tuna Salad

I prepared tuna salad using light Miracle Whip, mustard and relish.

I am trying to make it through Wednesday without going to the grocery store since I’ll be heading home for Christmas Wednesday night. Throughout the week my meals will be made of food I have on hand. I actually enjoy these little self-challenges!

Along with my tuna salad, I ate tasty lavash chips.

Lavash Chips

I cut up a Joseph’s lavash bread into chips, sprayed them lightly with cooking spray and sprinkled them with salt before baking them until they were crispy.

Monday's Lunch

This lunch was waaay more filling than I anticipated! Phew.

Stinky Foods

I seem to really enjoy stinky foods. I love tuna, hard-boiled eggs and basically anything with garlic. To avoid office hatred, I always prepare my smelly meals outside of my workspace so people do not have to smell the stank all day long.

During my first week at my current job, I made the mistake of bringing egg salad to work and opening the container at my desk. The place stunk to high heaven! Great first impression, huh?

What’s the stinkiest food you absolutely love?
