How flippin’ gorgeous is the weather in Central Florida!?

(For those of you not in Florida at the moment, it’s pretty fantastic!)

After changing into scrubby clothes and leashing up the pup, I was off to meet my friend Laurel for a walk in the sunshine!

We walked around a big lake near Laurel’s apartment for a little more than an hour. It was good to catch up with her and Sadie was happy to be part of girl’s time, too!

Dinner

After our walk, I came home and wanted a quick dinner because my tummy was grumblin’.

I really enjoyed my lunch today and was cravin’ more of the same for dinner.

I reheated a big bowl of spaghetti squash and topped it with broccoli, cauliflower, marinara sauce, Parmesan cheese and Morningstar Farms Grillers Recipe Crumbles.

Those fakie meat crumbles are pretty darn good! Even Ryan, a huge meat lover, said he doesn’t think he’d know they weren’t meat if I served them in a pasta “meat” sauce.

Wine or Bread

Work, work, work!

Today has been quite the busy day at the office! I usually have a lot of work to do, but it typically involves a lot of writing, which I love, so it doesn’t feel so daunting. Today, however, I am doing a lot of number crunching because I am putting together a quarterly review for my department. Phew!

Needless to say my mind and belly were ready for a break around lunchtime.

I was pretty pumped for my lunch today.

Last night as we were making dinner, I cooked spaghetti squash to use in my mid-day meal.

To the big bowl ‘o’ squash, I added zucchini, portobello mushrooms, cauliflower, marinara sauce and ricotta cheese (Yes, I am obsessed).

I stirred everything up and wolfed this down like it was cool.

Wine Vs. Bread

Yesterday I read a little excerpt on FitSugar.com that included diet dos and don’ts from the Countess LuAnn de Lesseps from the Real Housewives of New York (which I’ve never actually seen).

She offers this advice to party goers:

“If you eat the bread, skip the wine. If you drink the wine, skip the bread. It’s one or the other. I personally choose the wine.”

I choose to take the stance that you can enjoy both, but if I had to choose one – fresh, crusty bread or a glass of wine, I’d definitely pick the bread. I ❤ food (and carbs!).

However, if the bread was stale and nothin’ special, I’d go for a glass of Relax Riesling. Yum.

Now I ask you…

If you had to choose between wine or bread, which would you pick?

Three Cheese Spaghetti Squash

I am determined to get through that never-ending tub of ricotta cheese in my fridge! I hate to waste food and am a VIP member of the clean plate club (for better or for worse).

Tonight’s dinner was a one bowl meal of spaghetti squash topped with three cheeses:

  • Ricotta
  • Gouda
  • Mozzarella

I microwaved everything in one bowl until it was steaming and all the cheeses were ooey gooey.

I added a lot of cheese to this mix, and the spaghetti squash flavor was definitely overpowered by the three cheeses. It was tasty, but I think I prefer my spaghetti squash topped with marinara and Parmesan cheese. Oh well, at least I used up some of that remaining ricotta!

I just polished off a fudgesicle and see another one in my future…

Junk Food = Depression?

I’m slowly pluggin’ away at the massive tub of ricotta cheese I have chillin’ in my fridge from Tuesday’s roasted eggplant lasagna dinner.

On Wednesday night I baked a spaghetti squash to have ready for eatin’ for lunch or dinner throughout the rest of the week.

I used a bunch of the forked-out squash in a “pasta” bowl for lunch today.

I topped the squash with portobello mushrooms, marinara sauce and Parmesan cheese before adding a large dollop of the remaining ricotta cheese. (Maybe the amount of ricotta was too big to be considered a dollop?)

This meal was really tasty! The ricotta cheese really took it to another level.

I can’t believe I still have almost an entire tub of ricotta remaining. What to make… what to make… ???

Is Junk Food Making You Depressed?

A registered dietitian with the MayoClinic recently addressed the relationship between junk food and depression on the MayoClinic’s web site, which I found pretty interesting:

“Some preliminary research suggests that having a poor diet can make you more vulnerable to depression. Researchers in Britain looked at depression and diet in over 3,000 middle-aged office workers over the course of five years. They found that people who ate a junk food diet — one that was high in processed meat, chocolates, sweet desserts, fried food, refined cereals and high-fat dairy products — were more likely to report symptoms of depression.”

I can honestly say that the process of eating junk food makes me happy, but I rarely feel elated or energetic afterward. I usually enter into a food coma, and find that indulging in sweets triggers my sweet tooth and I keep wanting more and more sweet treats!

Healthy Planning

In the midst of my sugar binge yesterday, I had the forethought to bake a spaghetti squash for use in my lunch today. Healthy planning while eating unhealthily… gotta love it! 🙂

I usually prepare my spaghetti squash with marinara sauce… as a pasta substitute or pizza (I’ll do this soon on the blog… it’s delish!). I love spaghetti squash with marinara sauce, but I’ve never tried it any other way. Any recommendations?
