Sloppy joes are kinda like chili in that they seem to taste even better the next day.

My lunch today included a leftover sloppy joe sandwich along with slice cucumber, grape tomatoes and kidney beans.

Confession: As I packed this lunch this morning, I easily ate a serving or two of cold sloppy joe meat. It’s so darn good!

Honeymoon Selection

Our wedding is less than two and a half months away and I can really feel the momentum picking up!

Ryan and I have been pretty laid back about the whole wedding planning process. We selected our venue, photographer and florist first, waited a while, and then selected our officiate and DJ… and now, 2.5 months out, all of the “little” projects are demanding our attention.

One not-so-little project that we really need to figure out is our honeymoon!

We Want the Beach!

For some reason neither of us are too into planning our honeymoon. I think it’s because there are so many options that meet our criteria:

  • Caribbean location
  • Beautiful beach
  • Activities available (namely scuba diving)
  • Clean, romantic hotel
  • Hotel located near a town for exploring

Yep, that’s pretty much it! This pretty much describes more than half of the hotels in the Caribbean!

We’re slowly narrowing down our choices and are leaning toward some resorts in the Dominican Republic. We love the all-inclusive options, as they seem like a great way to indulge but also save some money.

Our goal is to get this trip booked within the week!

Tonight’s dinner featured sloppy joes paired with roasted Brussels sprouts.

I made the ‘joes using lean ground beef, a chopped onion, apple cider vinegar and ketchup.

The flavors blended perfectly to create a tangy sloppy joe mixture.

I filled my bowl with the beef and Brussels sprouts and went back for seconds of the meaty goodness!

Post-Work Yoga

After work today I high-tailed it home to hit the gym for some post-work yoga.

For a girl who had not experienced a good yoga class in her entire life only a month ago, I have come a long way in such a short time. Now I find my body craving the good stretch of a yoga class.

Since I already worked out this morning, I wanted to take the class nice ‘n’ easy and just workout some of the kinks in my body. I had no idea how fantastic yoga feels on your hips. All the hip-opening stretches are amazing.

Ever since I made sloppy joes for dinner on Monday, I’ve been picking at the leftovers every time I open the fridge.

Today I ate the last of the ‘joes for lunch.

I am a bit relieved to have these leftovers out of the fridge. As tasty as they were, I couldn’t seem to resist taking a forkful of the yummy meat every time I’d open the fridge (Yes, even before breakfast).

Do you sneak “little tastes” of items in your fridge or pantry? Any go-to foods?

You know I love my peanut butter fingers! 😉

Aside from peanut butter fingers, I used to always grab something every time I’d open our pantry. I’ve found that eliminating large boxes of cereal or crackers has really helped me with this. If it’s not there, I can’t eat it!

I Made ‘Em Extra Sloppy For Ya

“Have some more sloppy joes! I made ’em extra sloppy for ya!”

To me, sloppy joes are a summertime staple.

They remind me of coming in for dinner after a night of playing neighborhood games outside (kick the can and ghost in the graveyard, anyone!?).

I know it’s not quite summer, but the warmer weather had me cravin’ the good stuff.

I set out to make a healthier version of the ol’ joes.

Into a skillet went 1.5 pounds of lean ground beef, followed by 3/4 of a large, sliced onion.

I like my sloppy joes on the vinegary side, so once the meat was browned, I added 1/3 cup apple cider vinegar and 1/2 cup ketchup to the skillet and let it simmer for a bit while I roasted squash and zucchini in the oven.

In no time at all, we had a summertime feast!
