Behind on Breakfast

This morning I opted to dedicate my a.m. post to this awesome giveaway (be sure to enter!), so I have some catchin’ up to do since my breakfast post was severely neglected.

Last night I made homemade cranberry sauce in the microwave. Didn’t know that was possible? Me neither, but it is! Oh joy.

To make my homemade sauce, I combined a bag of fresh cranberries and water in a bowl and microwaved it on high for 3 minutes, stirred and microwaved it for another 3 minutes or so until the cranberries popped open, releasing their flava!

I stirred in just enough sugar to make it taste slighty sweet and take some of the bitter punch out of the sauce. I ate a bucket-load of warm cranberry sauce as my dessert after dinner last night. It was so good!

Needless to say, I just had to incorporate my homemade cranberry sauce into my breakfast.

Today’s breakfast included:

  • 1/2 c. cottage cheese
  • 1/2 c. homemade cranberry sauce
  • 1/2 sliced apple

Even though this wasn’t that large of a breakfast, it really filled me up! I think it must have been all the fiber from the cranberries and the apple.

I’m incorporating the cranberry sauce into my lunch wrap today too (whole wheat tortilla, Laughing Cow Swiss cheese, turkey and cranberry sauce). Yum.

Google Reader Issue

Pumpkin, Popcorn and Chili – Oh My!

Though nearly every one (or every couple) brought a pumpkin to last night’s pumpkin carving hoopla, it seemed like food was even more prevalent than the lovely gourd!

A bunch of us gathered at our friends’ Pete and Merri’s apartment for their annual pumpkin carving party. Our fabulous hostess even cooked up a huge pot of homemade Cincinnati chili for the occasion.

Apparently Cincinnati is quite famous for their chili! Wikipedia even has an entry for Cincinnati chili: Cincinnati chili is a regional style of chili characterized by the use of unusual ingredients such as cinnamon, cloves, or chocolate. Those Ohio folks know how to make a mean batch of chili!

Merri and Pete had a bunch of yummy toppings prepared to spruce up the already fantastic chili.

I was heavily addicted to the oyster crackers.

While we were waiting for my friend Laurel’s corn bread to heat up in the oven, we all snaked on copious amounts of chocolate-covered popcorn and candy corn.

Everyone’s pumpkins looked great, which made my poor guy (who we all named Grimace) look even more deformed. Don’t worry though, he’ll shine with a candle in his belly on our front porch for the world to enjoy!

I love fun nights with great friends and tasty food, even though I always seem to leave with that Thanksgiving-full feeling (i.e. sick!). Totally worth it! 🙂

This morning I woke up still slightly full from last night. That’s how you knoooow you ate too much! 🙂 Still, that didn’t stop me from makin’ a tasty breakfast.
