Summer Meal

Gosh, I love summer meals.

Hot-diggity-dawgs fresh off the grill just scream summer! And when those “hot dogs” come in the form of aidells Italian Style all-natural chicken sausage, that’s all the better!

Tonight’s dinner included grilled chicken sausage served on a fresh bun with sauerkraut, parnsip fries, ketchup and sweet pickles.

Parsnip Fries

 I made the parsnip fries by peeling and slicing several parnips before spraying them with cooking spray, sprinkling the fries with salt and pepper and roasting them in the oven at 420 degrees for 25 minutes, flipping them half way through.

These fries actually reminded me quite a bit of rutabaga fries!

Dinner is Served

After dinner, Ryan and I sat out back with Sadie to entertain her with several rounds of fetch.

We shared a couple of post-dinner treats like a bag of popcorn and an apple with peanut butter while enjoying the pre-rain breezes.

Eventually the rain arrived and we were forced inside.

We’re thinking of making tonight a movie night after we head out for a lil’ dessert. One strawberry milkshake with two straws, please! 😉

I’m really happy to be enjoying a relaxing night at home. I feel like our weekends have been jam-packed lately and I’m thrilled to have a weekend in Orlando to get some wedding related things done!

Salmon Burger Bonanza

My lunch today was quite fishy… Fishy Friday! 😀

I had a SeaPak salmon burger on a whole wheat sandwich thin with dill dijonaise and portobello mushrooms.

I made the dijonaise with light Miracle Whip, dijon mustard and dill. It added a nice touch of creaminess to my  sandwich.

I also enjoyed carrot sticks and pickles on the side.

Because my sweet tooth just wouldn’t be satisfied after a savory lunch, I also packed a cup of Chobani Greek yogurt that I topped with thawed frozen raspberries to have for dessert.

I love the vibrant color the raspberries add to a simple yogurt cup. Tasty, tasty.

Weekend Plans

This weekend is going to be full o’ fun!

Friday:

  • Going to see Valentine’s Day (movie) with girls from work
  • Dinner (pizza!) with Ryan
  • Sort through clothes to give to Goodwill

Saturday:

Sunday:

  • Church
  • Ryan’s soccer game
  • Mall
  • Drive to Winter Haven to look at scuba gear

Should be a fun and busy weekend!

My lunch today was a Plain Jane sandwich. Nice ‘n’ simple.

  • Arnold whole wheat sandwich thin
  • Deli sliced rotisserie chicken breast
  • Spicy mustard
  • Plum tomato

On the side I enjoyed a couple of dill pickles and carrot sticks.

Whenever I open a new jar of pickles, I always think of Ellen’s stand-up routine about how ridiculously full the jars are. “I wish they packed potato chips the way they pack pickles!”
