Onion Overload

Onions are delicious and add so much flavor to any dish that needs a little oomph. Case in point: a boring turkey sandwich.

Throw in an onion bagel and some sauteed red onions and your boring lunch staple is transformed!

Today’s lunch was a simple turkey bagel sandwich prepared on a fresh Alternative Bagel onion bagel with red onion, feta cheese, spinach, plum tomato and dijon mustard.

Gemma Ward Quits Modeling Amid Weight Criticism

The latest news on the fashion front? Gemma Ward, the beautiful healthy-looking 22-year-old Australian supermodel, decided to quit modeling this week following attacks from the media about her weight gain.

Call me crazy, but this looks like a healthy woman… not someone with even a teeny ounce of a weight problem. And we wonder why girls are always questioning their appearance rather than embracing their bodies…

A Fetchin’ Good Night

Orthodontist Appointment and Wedding Talk

I left work a little early today for an invisalign appointment with my orthodontist. Yes, I am 24 and am going through braces (albeit clear ones) for the first time.

My orthodontist is awesome (she went to Haaaa-vard) and is a fellow bride-to-be. I ended up staying after my appointment for half an hour or so chatting with her and oogling over Orlando wedding photographer’s photo albums online. All the wedding talk made me super excited for this weekend when Ryan and I head to St. Petersburg to stay with my parents and check out some venues. We’re not sure whether Orlando or St. Pete will be our location of choice, but I am ready to start lookin’ at some places!

Entertaining the Pup

Sadie was ready and rearin’ to go when I got home. I tossed a load of laundry in the washing machine and leashed her up for a trip to the dog park.

I loved that sign posted on the doggie bulletin board. Nice and to the point. Pick up the doodie people!

Sadie took off and found a ball within 2.5 seconds of our arrival to the park.

Dinner was a remix of leftovers. I used the roasted butternut squash and onions from last night’s butternut and apple pizza and tossed them with broccoli florets and portobello mushrooms.

When I arrived home from work today a sorry sight greeted me.

Butternut Squash and Apple Pizza

First I plucked a small butternut squash from our produce basket, peeled and cubed it. After cutting up a red onion, I tossed the veggies in olive oil and salt and baked them for approximately 20 minutes at 375 degrees.

After the veggies were toasty, I crisped a Joseph’s lavash bread in the oven before topping it with the cubed butternut squash, red onion, chopped spinach, sliced Honeycrisp apple and goat cheese.

I ate the whole thing and licked my fingers clean.

I’m off to continue my Gossip Girl marathon with a tasty cup of hot chocolate.

Whole Lotta Veggies

Last night I was loving the taste of the sauteed portobello mushrooms and onions in my pasta and wanted to incorporate them into my lunch today.

I made a big ol’ veggie bowl with onions, mushrooms, steamed broccoli florets and chickpeas.

I smothered the veggies in a French onion flavored Laughing Cow cheese wedge for added creaminess. Very tasty.

Snack Time

As I’ve mentioned before, I do not typically post my snacks since they’re usually the same thing over and over and I don’t want to bore you. Today, however, my morning snack was so darn tasty and I actually snapped a pic to share.

Cottage Cheese Blended with Pumpkin, Sweetener and Pumpkin Pie Spice

I blended cottage cheese with pumpkin, sweetener and pumpkin pie spice. This mix reminded me of pumpkin pie and got me all the more excited for Thanksgiving.

I used a no salt added cottage cheese. This was my first time using cottage cheese without any added salt. I picked up the container at the grocery yesterday since I had a coupon. I didn’t even know there was a lot of salt in cottage cheese, but let me just tell you that when it’s removed, you notice! Wow. It was great blended with the pumpkin, but repulsive on its own.

I would definitely buy the no salt added cottage cheese again, but only for use in recipes. I don’t want to punish my mouth by eating it on its own ever again. Bleh!

All Clammed Up

I was clammed up twice after work today… once when I walked through the door and was shocked by what lay before me and the second time when I was eating my delicious pasta dinner full of clams!

When I got home I was greeted by doggie doo doo. Little Sadie decided to leave me quite the stanky treat on the front rug which was completely shocking since she’s 100 percent potty trained and hasn’t done anything like this in well over a year. I think her poor lil’ puppy belly is a little upset tonight.

After taking Sadie on a walk and feeling relieved when I saw a little pep in her step, I felt comfortable leaving her on her own for 30 minutes when I headed off to the grocery store.

It was an awesome trip because I saw something on the shelves that made me veeeery excited:

Yay! I can’t WAIT for the holidays!

Dinner was a mumbo-jumbo of pasta, veggies and clams.

First I sauted onions and Portobello mushrooms in a bit of olive oil while boiling egg noodles.

I combined a can of little neck clams with the veggies and some sauted spinach and topped the pasta with the mixture.

 This pasta dish was veeeery filling, but it didn’t stop me from enjoying a post-dinner pack of chocolate-covered soy nuts.

I’m off to continue watchin’ season one of Gossip Girl… this show is addicting! Oh and I am officially obsessed with Serena’s hair.
