Gouda ‘Dilla

I am convinced that cheese can make any dish taste even better. Spaghetti = better with cheese. Tacos = better with cheese. Ice cream = better with cheese. 😉

Okay, maybe cheese doesn’t enhance every dish, but it is gosh darn delicious!

On Sunday I bought a pack of Gouda cheese to broaden my cheesy horizons. I love the intense flavor of this cheese. It really does add a lot to a sandwich, or in the case of my lunch, a quesadilla.

Quesadilla

I made a microwavable quesadilla with the following items:

  • Whole wheat tortilla
  • Gouda cheese
  • Kidney beans
  • Broccoli

I meant to pack salsa, but I forgot. Boo! Even salsa-less, it was quite yummy.

For dessert I enjoyed a small box of the traditional Valentine’s Day candy, Sweethearts!

My favorite hearts have always been the pink and the white hearts. They’re the best! (Oranges are pretty good, too.)

Snack in a Snap

Today’s mid-morning snack came together in a (ginger)snap!

Gingersnap Yogurt

I topped a cup of Fage Greek yogurt with four small gingersnap cookies and added a little sweetener before digging in. So delish!

Pantry Scroungin’

During our early evening walk with Sadie, Ryan and I realized we didn’t have anything on the horizon for dinner. Uh oh!

Time for some pantry scroungin’!

I wanted pasta (surprise, surprise) but Ryan was in the mood for chicken, so while he unloaded the dishwasher, I got work making two separate, but equally tasty dinners.

My dinner:

  • Carba Nada egg fettuccine noodles
  • Marinara meat sauce
  • Parmesan cheese
  • Broccoli
  • Clams

Ryan’s dinner:

Chicken with Red Beans and Rice

Ryan’s rice bowl included:

  • Brown rice
  • Kidney beans
  • Chicken strips

Beanie Weenies

One of Ryan’s favorite meals is beanie weenies.

Not familiar with beanie weenies? It’s a fancy and fun lil’ name for the traditional franks ‘n’ beans dish!

Baked beans with chopped-up hot dogs really is a delicious one-bowl meal. Ryan introduced me to the yumminess and I’m quite a fan.

What’s your favorite way to enjoy baked beans?

I like ’em best on top of a grilled hot dog filled with lots of veggies and condiments. YUM.

Lunch

Though I didn’t have beanie weenies for lunch today, I did enjoy beans!

I made tuna salad using light Miracle Whip, relish and mustard and stirred in a bunch of kidney beans.
