My lunch today was quite fishy!

Tuna Salad

I prepared tuna salad using light Miracle Whip, mustard and relish.

I am trying to make it through Wednesday without going to the grocery store since I’ll be heading home for Christmas Wednesday night. Throughout the week my meals will be made of food I have on hand. I actually enjoy these little self-challenges!

Along with my tuna salad, I ate tasty lavash chips.

I cut up a Joseph’s lavash bread into chips, sprayed them lightly with cooking spray and sprinkled them with salt before baking them until they were crispy.

This lunch was waaay more filling than I anticipated! Phew.

Stinky Foods

I seem to really enjoy stinky foods. I love tuna, hard-boiled eggs and basically anything with garlic. To avoid office hatred, I always prepare my smelly meals outside of my workspace so people do not have to smell the stank all day long.

During my first week at my current job, I made the mistake of bringing egg salad to work and opening the container at my desk. The place stunk to high heaven! Great first impression, huh?

Egg-cellent Salad

My lunchtime salad was eggcellent!

I haven’t made egg salad in forever. I took the time to make some hard-boiled eggs Sunday night and used four of the hard-boiled egg whites to make my long lost egg salad for lunch today.

My egg salad recipe is super simple:

  • 4 egg whites, chopped
  • 1 tbsp. Light Miracle Whip
  • 1 tbsp. relish
  • 1 squirt of mustard

Sometimes I’ll use two egg whites and one whole egg, but I wasn’t feelin’ the yolk today.

I enjoyed my egg salad on a Joseph’s lavash bread with two big handfuls of spinach.

On-Hand Lavash Pizza

Since we arrived home to Orlando later in the evening, we didn’t have time to run to to grocery store, so lunch was limited to ingredients I had on hand.

I made a lavash pizza using:

  • One Joseph’s lavash bread
  • Tomato basil marinara sauce
  • Goat cheese
  • Spinach
  • Plum tomato slices

It was delish and I ended up rolling it up pizza- roll up style! The blend of the marinara sauce and the goat cheese was a creamy, white pizza sauce. So good!

Check and Check

It looks like this past weekend was very successful in the wedding planning process. Thank you to all of you who commented with tips on how to save money and cut costs. I’m sure I’ll be asking for your advice more and more as the planning progresses.

We’ve selected our florist and photographer and I’m off to mail our contract tothe photographer this evening! Exciting stuff!!!

French Toast Strips and Christmas Shopping

This morning I awoke to the sound of rain on the roof. I curled up and went back to sleep for another hour or so since there’s no cozier sound than rain against the window. Ahhh, I love the weekends!

Once I got out of bed, Ryan and I leashed up Sadie for a chilly walk in dreary Orlando. It actually felt like winter! Brrr. Our chilly walk prompted cravings for a warm breakfast. Cinnamon sounded tasty and I wanted to try to make French toast strips out of Joseph’s lavash bread.

I used egg whites and lots of cinnamon to dip the lavash strips in before placing them on the griddle. They smelled and tasted phenomenal. Of course I topped them with yummy syrup.

After breakfast, Ryan and I headed out to put a dent in our Christmas shopping. We arrived 20 minutes before the stores opened (we figured they’d be open by 9 a.m. – not so!) and wasted time wondering around the shops.

Since it was cold outside we stopped by Starbucks for some hot beverages. I ordered a skinny caramel latte.

After Starbucks we wandered into Le Gourmet Chef where I think I ate my lunch in free samples! Yikes! They had so many different foods and dips to try and I couldn’t resist any of them. I even took several handfuls of animal crackers to enjoy while I browsed.

I loved just about every thing I saw in J. Crew, including these pj pants:

Every year on Christmas Eve, my family gets new pajamas. I love this tradition because going to sleep in my new Christmas pj’s makes me feel extra festive. Plus, it’s fun to have something to open before all the Christmas madness begins in the morning. 😀 Needless to say, I always take extra time looking at holiday pajamas in the stores.

After stopping in several more stores, Ryan and I headed toward the car.  I dropped Ryan off at home before heading out to a shopping center near our apartment for a little more shopping. My shopping stamina exceeds his by just a little. 😉

We bought some (hopefully great) gifts for our loved ones.

Shopping Success

On my way back from my second round of shopping I got a call from Ryan with a special request: the new eggnog milkshake from McDonald’s. Since neither of us have ever tried it before, I swung by the ol’ McD’s and picked up a small shake.

This seasonal shake was g-o-o-d! I think eggnog is very tasty and this shake replicated the flavor really well. YUM.

Saturday Morning Hike

I woke up at 5:30 a.m. this morning… for no reason. This is getting ridiculous! I wasted time waiting for Ryan to wake up by updating my iPod and flipping through wedding magazines.

Armed with a jammin’ new playlist, I leashed up the pup and went for a quick 30 minute run before breakfast. It was gorgeous outside! 

When I got home I made some more cranberry relish and topped a of bowl of butter pecan Flax Z Snax hot cereal with the colorful relish. I also stirred in half of a scoop of All the Whey cup cake batter protein powder and a big dollup of pumpkin.

Hikin’ Time

When Ryan suggested going for a hike with Sadie at Weikwa Springs Park after breakfast I was more than game. The cool breeze and sunny weather made it a perfect day for hiking.

We followed the Orange Trail, which was a nice 5.3-mile loop through the park.

We’ve done this hike many times before, but today’s weather made it extra enjoyable. Plus, we had a super-cute line leader.

In the past we’ve seen deer and wild turkeys on this hike, but today our wildlife run ins were limited to freaky-deaky creatures.

We saw three black snakes. I was quite on edge after the first encounter!

After our hike, we both were haaangry! Ryan stopped on our way home to pick up a Cuban sandwich.

For my lunch, I opted for a flatbread pizza made on a Joseph’s lavash bread with marinara, broccoli, spinach and goat cheese.

I was still hungry after lunch, so I popped a bag of Orville Redenbacher’s 100-calorie butter popcorn to fuel this post. Now I feel nice and full.

Plans

I’m so happy to have a weekend at home! I feel like I haven’t had a weekend in Orlando in a while.

Next on the agenda for today is cleaning the apartment and decorating for Christmas. Ryan’s already popped in the Batman Begins DVD to entertain himself while I dive into the holiday goodies! We may have a dilemma on our hands when I try to blast Christmas music…

The holiday fun will continue today since this month it’s my turn to plan our “special date” for the month. I’m taking Ryan to the Festival of Trees event at the Orlando Museum of Art. The entire museum is decked out in Christmas decor with hundreds of trees on display. They’re all decorated from head to toe and look amazing.

After visiting the Museum we have reservations at Season’s 52, one of our favorite restaurants. All the food they serve has less than 475 calories and they utilize the freshest ingredients to create amazing dishes. I’m excited! I LOVE date night!
