Who Spiked the Eggnog?

Straight No Chaser just released their first ever music video! It’s holiday-themed, which obviously pleases me to no end.

Here’s the video for “Who Spiked the Eggnog?” a song off their latest Christmas CD, Christmas Cheers.

I love this acapella band and own both of their Christmas CDs (highly recommended). The happy, upbeat music always ups my Christmas cheer.

Lunch today was a ginormous salad featuring lots of random veggies, fruit and cheeeese.

I topped a bed of fresh spinach with leftover green beans and broccoli from last night’s dinner, mushrooms, homemade cranberry relish, feta and goat cheese. I used Annie’s Naturals raspberry vinaigrette dressing for added sweetness.

A Rare Appearance

Today I randomly snapped a pic of my elusive morning snack. As you may remember, I usually do not take pictures of my snacks, but today I was feelin’ pic-happy.


I made a quick microwavable quesadilla. I just placed a stick of string cheese on a whole wheat pita an microwaved it for 45 seconds until the cheese was melted. Easy, warm, delish ‘dilla!


I will be leaving work early today for yet another Invisalign appointment with my orthodontist. IĀ  actually don’t mind these appointments (I have to go once every six weeks) because my orthodontist is amazing and is engaged as well! I love all the wedding talk! šŸ™‚

After my appointment, I am hoping to make it home early to take Sadie on a walk with Ryan before dinner. Then I’m hosting our weekly girl’s movie night! We’ll be watching Elf, one of my favorites.

Green Scene

Lunch today was quite the scene of green.

I made a salad using several green ingredients:

  • Spinach
  • Celery
  • Green beans
  • Broccoli
  • Apple
  • Turkey
  • Feta cheese
  • Annie’s Naturals raspberry vinaigrette dressing

Dressing so good you could drink it!

Salads full of veggies, cheese, fruit and meat are a lot more satisfying to me than plain lettuce and dressing. It’s fun to taste something different every bite.

I know Ryan isn’t big on fruit in his salad. I, on the other hand, love fruit in pretty much anything, so I’m quite the fan. Do you like fruit in your salad? Any favorites?

Easy Dinner

Tonight I will be kicking off holiday movie night with some of my girlfriends. Each week through Christmas we’ll watch a holiday movie one night a week at a different girl’s apartment. I’m excited!

Since I’ll be out of the house by 7 p.m. tonight, our Sadie-walking/ dinner-cooking window is tight tonight. To be sure Sadie gets her walk and we have time to eat before I go, I placed the pork for tonight’sĀ  dinner in the crock pot before I left for work.

Onion Overload

Onions are delicious and add so much flavor to any dish that needs a little oomph. Case in point: a boring turkey sandwich.

Throw in an onion bagel and some sauteed red onions and your boring lunch staple is transformed!

Today’s lunch was a simple turkey bagel sandwich prepared on a fresh Alternative Bagel onion bagel with red onion, feta cheese, spinach, plum tomato and dijon mustard.

Gemma Ward Quits Modeling Amid Weight Criticism

The latest news on the fashion front? Gemma Ward, the beautiful healthy-looking 22-year-old Australian supermodel, decided to quit modeling this week following attacks from the media about her weight gain.

Call me crazy, but this looks like a healthy woman… not someone with even a teeny ounce of a weight problem. And we wonder why girls are always questioning their appearance rather than embracing their bodies…

Redeeming My Chocolate-Covered Popcorn Indulgence

After eating my body weight in chocolate-covered popcorn (and pumpkin pie!) last night, I knew today’s lunch needed to step up the nutrition a notch.

What better way to get a lot of fresh, vitamin-rich veggies in your belly than a big salad?

Last night I prepped for my lunchtime salad by chopping up a sweet potato into little bite-size chunks and microwaving them for five minutes before flipping them and nuking them for another 90 seconds.

Not the best way to cook a sweet potato in my opinion, but it works!



The base for my salad was bright green leafy spinach topped with several handfuls of broccoli slaw.

In addition to the sweet potato chunks, I used freshly chopped zucchini and celery to add some crunch to the salad and incorporated steamed broccoli and cauliflower florets for additional color and flavor. Naturally I needed some cheese to make me happy, so I added a handful of feta for a protein kick.

I used a light raspberry vinaigrette as my dressing and wolfed the entire salad down in no time at all. I have a gift for fast eating. šŸ˜‰

…and that would be with seafood (shrimp in particular). šŸ™‚

I used this tasty seasoning to enhance my lunchtime shrimp salad.

I began preparing this lunch last night and boiled approximately three ounces of lil’ shrimpies until they were nice and orange. I let them chill in the fridge overnight.



To make the shrimp salad, I combined chopped shrimp, light mayo, celery, President feta cheese (the best!) and lots and lots (and lots!) of Old Bay.

I stuffed the shrimp salad into a whole wheat Joseph’s pita, along with lots of fresh, leafy spinach.
