Wrap it Up

Oh how I wish our work break room had an oven. Rather than making myself an eggplant, broccoli, and spinach pizza, the lack of an oven forced me to turn my desire for thin n’ crispy pizza crust into a make-shift pizza wrap.

Delicious… but not the crispy crust I was hopin’ for.

I topped a Joseph’s lavash with marinara sauce, goat cheese, broccoli, roasted eggplant and fresh spinach.

I love how the goat cheese melted into the marinara and made a creamy pink sauce.

Mah Lunch

The wrap was veeeery good, but fell apart about half way through. I love messy foods and still polished it off with a fork!

We also had a special visitor at our office today… my boss’ adorable daughter stopped by with Halloween goodies for everyone. She was too cute in her orange and black.

In my candy bag I found several sweet treats, but my hands immediately went for the chocolate.

Love the Cookie Crunch

I ate one before lunch as my appetizer…

…then the other as my dessert.  🙂

This past weekend when I was chatting with my mom, I was sharing some of the tips I included in my article about maintaining a healthy diet when the Halloween candy hits. She informed me that she already purchased the big bag of our favorite chocolates… KitKats, Milky Ways, Reese’s, Snickers… the works! Looks like this weekend at home will really test my willpower!

I actually noticed that after I finished eating the candy, I immediately wanted more. I wasn’t hungry since I just finished my lunch, but I adore chocolate and could eat myself sick with the stuff. Clearly candy is a trigger food for this girl!

Paper Airplanes, Robin Williams and a Veggie Stir Fry

A Friendly Office Competition

Yesterday really felt like a Friday at work. Everyone was energetic and antsy waiting for the weekend to arrive. That, coupled with the fact that it was the last day for one employee who is moving to New York, made the office quite a-buzz.

At around 4 p.m. my boss came into the “writer’s cube” and told us there would be a paper airplane competition commencing in approximaltey five minutes. We scurried to create the fastest, most aerodynamic jets we could from scrap paper.

Sadly, the only paper airlplane I ever learned how to make was the old fashioned “hot dog style” plane (Exhibit A: bottom right corner of the picture). I loved my plane and even wrote “Air Julie” in hot pink on the sides, but this affection did not motivate my little flier to fly.

I’m sad to report I actually came in last place out of the entire office in the paper airplane competition. I think Ryan was more disappointed about this news than I was. I believe his exact words were, “Oh Baby, we gotta work on that.” Apparently it’s quite a serious issue.

When I got home from work, I quickly assembled a veggie stir fry using random veggies we had on hand.

  • Eggplant
  • Zucchini
  • Onion

I chopped the veggies and sauted them in a pan sprayed with cooking spray. I also added a freshly chopped garlic clove and two sun-dried tomato and mozzarella chicken sausages.

Once the veggies softened, I added a splash of marinara sauce and topped the mix with breadcrumbs.

Ryan and I both loved this simple dinner. The flavor of the sausages really infused all the veggies. Very tasty!

Lots o’ Laughs

After dinner it was time to head toward the UCF Arena for ROBIN WILLIAMS! Yahooooo!

Simlin' before Robin Williams!

Tons and tons of people came out to see Robin perform. He was beyond hysterical. I laughed until my tummy hurt!

Unfortunately cameras were not allowed so I couldn’t snap a picture of Robin, but here’s a picture of his stage:

I love a great night filled with lots of laughter!

Roasted Eggplant and Goat Cheese Sandwich

Last night as I was roasting my yummy root veggies, I also roasted a few slices of eggplant for today’s lunch.

This planning ahead allowed my lunch to come together in a flash this afternoon! When hunger hits me, it hits me hard, so I like quick and convenient food.

To begin constructing my sandwich, I placed a whole wheat Arnold’s sandwich thin topped with four roasted eggplant slices and goat cheese in the toaster oven.

While the bread was toasting and the goat cheese melting, I sliced up a plum tomato to place on the sandwich. After adding a handful of fresh spinach on top of the tomato slices, my lunch was complete!

Once again, the goat cheese was the star of my lunch.
