I love that song by 38 Special. I heard it in the gym first thing this morning and it set my day off on the right foot! There’s something about amazing ’80s music that just does it for me. ๐Ÿ˜€

'80s Night!


With “Caught Up in You” jammin’ in my head, I danced my way into BodyPump this morning for a total-body strength training workout.

I felt like my mind was racing a mile a minute throughout the class. I found myself thinking about everything but BodyPump. By the time we were laying on our mats to do some ab work, signaling the end of the class, I was shocked at how fast the class flew by!

Post Pump, I leashed up Sadie for a 40-minute walk around the lake near my apartment. I don’t want to jinx it, but the weather in Florida lately has been wonderful! It’s remained in the ’80s and hasn’t creeped into the hotter-than-heck ’90s for a few days. Woop, woop!


I prepped my breakfast last night which made it super easy this morning!

Last night I cooked up a small batch of pearled barley and let the whole grain cool down overnight in the fridge.

This morning it was ready to be used in a barley breakfast bowl.

Peach + Barley Yogurt Bowl

To make my barley breakfast bowl, I combined a cup of Greek yogurt with the cold cooked barley and topped it off with peach slices and nutmeg.

I love the nuttiness and chewy texture barley brings to the table.

As I typed up this post, I looked back through some of my old posts about barley and stumbled upon this one that I posted during my first month of blogging. Holy crap-tastic pictures. Thank goodness I invested in a better camera.

Along with my barley breakfast bowl, I also enjoyed a tumbler full of Barnie’s French vanilla coffee that I snagged for the freezie at my gym.

I practically burned off my tongue after the first sip.

The Heat is On

I like really HOT coffee, so I took my time sippin’ it rather than gulping it to prevent the loss of additional taste buds. I’m so scrappy. ๐Ÿ˜‰

My Insides Are Burning

Have you ever taken such a huge gulp of a hot beverage that it seems like you can honestly feel the liquid travel down your body?

That happened to me twice this morning. I think it’s because the free coffee I picked up from the gym was so tasty. Who can resist gulping Barnie’s hazelnut coffee mixed with cinnamon butter cookie coffee? Not me, apparently.

As a result, my insides are on fi-ah!


Breakfast was on the cooler side. I enjoyed a cup of Chobani Greek yogurt topped with a cup of Cheerios. Nice and simple.

I like to put my Greek yogurt in the freezer for 30 – 45 min. before I eat it. I think it makes it thicker and even creamier. Two good things in my book!

Healthy Thanksgiving Desserts

Yesterday when I posted my latest Examiner article about which desserts pack a major calorie punch on Thanksgiving, I started Googling healthy recipes for Thanksgiving desserts.

I love the Hungry Girl Web site for the creative recipes and healthier spins on high calorie dishes. I printed out two recipes I’d like to make for Thanksgiving this year:

Four Thanksgivings???

Tonight my gym is hosting a healthy Thanksgiving dinner. Ryan and I are thinking about attending and that would mean I will be experiencing four Thanksgiving meals this year.

1. Tonight:ย  Gym Thanksgiving dinner

2. Sunday: Thanksgiving potluck party with friends

3. Monday: Work potluck Thanksgiving lunch

4. Thursday: Actual Thanksgiving dinner

If I post pictures of myself and you notice I’m sporting a beak and a gobbler it’s because I’ve officially turned into a turkey.

Actually, chances are if I’d turn into anything it would either be a big bowl of stuffing or a slice of pumpkin pie.

Pre-Thanksgiving Cranberry Joy

Cranberry sauce is one of my favorite dishes on Thanksgiving. It’s also delicious as a spread on leftover turkey sandwiches with cream cheese (if you’ve never tried this, you must).

What’s your favorite Thanksgiving dish?

This week I impulsively bought a bag of cranberries at the grocery store when a random idea popped in my head. Rather than wait until Thanksgiving to experience the joy of cranberry sauce, I figured I’d make my own cranberry concoction using the berries and only one other ingredient: sugar.

Since I still have my mom’s food processor on loan, I used the nifty lil’ slicer to chop the cranberries into a relish.

I then added just enough sugar so the cranberries lost a little bit of their bite. Much better!

This was so good and so easy. I ate a bunch of my sweet cranberry relish last night but managed to save some to stir into my Greek yogurt for breakfast.

I also used a toasted Kashi strawberry flax waffle to dip into the thick mixture.

I loooved this breakfast and the homemade cranberry relish really made it extra special. Woohoo!

Jumpy Morning

Do you ever have those mornings where everything makes you jump and you feel completely on edge?

This morning on my walk with Sadie every little drop of an acorn made her jump which, in turn, made me jump. We were two jumpy lil’ ladies. I hope I relax soon! Though I don’t think this cup of coffee I’m drinking will exactly help me calm down… ๐Ÿ˜‰


Apples, PB and a Survey

On Wednesday, Orlando reached a record high temperature of 93 degrees. Ninety-three degrees… in October… in the middle of fall. C’mon!

I’m determined not to let this ruin my autumn cheer and started the day off with an apple in honor of this season’s most loved fruit.

I sliced my Jazz apple (delicious!) with a wonderful apple slicer that my Aunt Laurie gave me when I moved into my first apartment after graduating college. This is one fantastic invention and makes slicing an apple perfectly an easy task.



Of course my intense love for peanut butter warranted using the creamy spread as a topper for this crisp fruit.

I served my apple slices and peanut butter with a big ol’ cuppa coffee from my gym’s free selection. I combined Barnie’s French vanilla, hazelnut and cinnamon butter cookie coffees in my tumbler for a nice hot drink.

Today’s breakfast centered around fresh strawberries, a blueberry Oikos organic Greek yogurt and a blueberry NutriGrain bar.

This week I ventured out from my favorite plain Greek yogurt and tried the honey Greek yogurt. After falling madly in love with the sweet and thick flavor, I decided to give the blueberry flavor a go today.

It was super yummy and very sweet. For anyone new to Greek yogurt, the blueberry or honey flavors would probably be a great way to ease into the thick and more tart taste of the yogurt.

I topped my yogurt with freshly cut strawberries and half of the blueberry NutriGrain bar (the other half was already in mah belly).

My gym serves free coffee until 10 a.m. on weekdays, so I made sure to fill up my tumbler with half Barnie’s French vanilla coffee and half Barnie’s cinnamon butter cookie coffee. What a tasty combination!



The breakfast was a berry delight. The fresh strawberries were perfectly sweet and the NutriGrain bar tasted like a crumbled piece of blueberry pie.


On a side note, in high school I used to eat NutriGrain bars all the time, thinking I was making a nutritious choice (I mean the label says NutriGrain for crying out loud). Well, after examining the label this morning, I noticed several things. While it’s wonderful that the main ingredient in the crust is whole grain rolled oats, the main ingredient in the blueberry filling is not blueberry… it’s high fructose corn syrup (HFCS). I do not completely avoid HFCS because it’s in so many products (often minimally), butย  when it’s this prevalent in a product, I steer clear. Sadly these “nutritious” bars will not be part of my breakfast again any time soon, though it was a tasty addition to my morning meal.
