I just had to take a quick trip to Mochi when I learned they had cake batter and piña colada flavors on tap today.

When I texted Ryan with this news, I received a text that said he’d be there in30 minutes in response.

Clearly he was excited as well. 😀

In honor of my dad’s special day, my mom, sister and I made him a cake in the shape of a fish since he’s a man who loves the ocean, boating, scuba diving and spear fishing.

We used a box mix to make reduced-sugar yellow cake and I made chocolate cream cheese icing from scratch using this recipe from Cooking Light.

I think my dad liked his special cake!

Now we’re heading out for a day on the boat to get some sun and test the new snorkel, fins and mask my mom and I bought at a scuba shop yesterday.

Broken Ankle, Bulls Game

Ryan lived with his cousin Daniel for 6+ years before Ryan and I moved in together. 

When Ryan and I were dating throughout college, I enjoyed many nights with these two as they cheered on their favorite basketball team, the Chicago Bulls.

A couple of weeks ago, Daniel broke his ankle in a soccer game and had to have surgery on it last week. Ryan, Sadie and I paid him and his girlfriend Courtney a visit this evening to watch the Bulls game and enjoy a yummy dinner.

Apparently Sadie is quite the good luck charm because the Bulls won by quite a bit!

When we arrived, Courtney had a delicious spread of appetizers waiting for us.

I had quite a bit of everything. Why are appetizers so good!?

I really liked how Courtney prepared the sliced cucumbers. She marinated the slices in a mixture of olive oil and red wine vinegar. They were delicious!

After about an hour, we were ready for dinner. 

Ryan and I brought over our BBQ meatloaf and everyone enjoyed several slices.

Dessert

Dessert was a combination of my spice cake mix cookies from this afternoon and a banana chocolate chip cake that Courtney baked.

I had a couple of slices of Courtney’s cake, which she made with yellow cake mix, three ripe bananas and chocolate chips.

Is it just me, or did this weekend fly by?

I sure could use another day! I need to have a serious conversation with the guy that decided weekends should only be two days.

Jam-Packed

Today was a jam-packed day!

Within 30 minutes of waking, Ryan and I were off to Bradenton to meet his dad for breakfast.

Ryan’s dad’s birthday was yesterday, so it was great to see him and spend some time with the birthday boy.

We met him at Peaches, an adorable restaurant that serves only breakfast and lunch.

I ordered a veggie omelet with a side of fruit salad.

After breakfast, Ryan, his dad and I ran to the outlets to stop in some shops. I wanted to return a pair of running capris to the Nike outlet and I left with a new sports bra and workout top. Score!

Wedding Dress Shoppin’

After saying goodbye to Ryan’s dad, we headed back to St. Pete.

I hopped into the car with my mom and sister to leave for our 12:30 appointment at a wedding dress boutique that was hosting a San Patrick trunk show.

They had the gown I loved the last time I was there, and I tried it on again. It really is beautiful! I apologize for the lack of pictures, but Ryan can’t see me in the dress that could be the dress until the big day. I’ll post pictures of the contenders once I actually select the dress, I promise!

After that trunk show, we headed over to the next trunk show featuring Maggie Sottero dresses. I had such high hopes, but was pretty disappointed. They only had a small selection of Maggie dresses and I didn’t see any of the ones I loved online. Oh well.

We were pretty darn hungry by the time all of our wedding dress appointments were over and headed to El Cap to pick up cheeseburgers for us and the guys to enjoy at home.

I only wanted a few bites, so I shared a burger with Ryan. I was cravin’ dippy eggs and fixed myself a yummy plate.

After a late lunch, Ryan and I decided to make a cake to enjoy for dessert tonight.

My mom loves tunnel of fudge cake and I gave her a box of the mix for Christmas. We decided to make this tasty cake and it made the whole house smell heavenly.

Before we added the chocolate to the mix, Sadie and my sister got to lick the beaters (one each) full of butter and sugar. They were in heaven.

Once we added the chocolate to the mix, Ryan and I dug into the batter for more than one fingerful of the yummy goodness. 🙂
