I had very sweet dreams last night… literally! I dreamt that I was in a bakery shop owned by Kathy Nijimy (aka the bubbly nun from Sister Act and the fun witch from Hocus Pocus).

I couldn’t decide between all the baked goods, so Kathy let me try everything. I was in dream heaven!

Should Kathy Nijimy ever open a bakery, I highly recommend the red velvet cupcakes. 😀

Breakfast

My breakfast was also nice ‘n’ sweet.

I made a bowl of butter pecan cake batter banana hot cereal. How’s that for a mouthful?

Into the mix went:

  • 1/4 c. Flax-Z-Snax butter pecan hot cereal
  • 1 scoop All the Whey cup cake batter protein powder
  • 1 small frozen banana

I enjoyed my breakfast with a hot mug of Yogi triple echinacea green tea. Warm belly!

Now I’m off to watch Ryan’s soccer game. Cross your fingers for a win!

What’s your favorite sport to watch?

My favorite sport to watch is diving (probably because I was a diver) or gymnastics, but if I had to pick a more “main stream” sport, I’d definitely pick basketball.

Breakfast Bomb

Not every random breakfast concoction I make is a success. Today’s breakfast would be a prime example of a breakfast bomb.

It wasn’t so awful that I didn’t eat the entire thing, but it wasn’t amazingly delicious either.

I started with cottage cheese and applesauce.

I blended the two together with lots of cinnamon.

The flavor was great, but the texture was all wrong. I think it would have tasted ten times better if I would have skipped the blending.

I topped the cinnamon apple cottage cheese with Kay’s Naturals apple cinnamon protein cereal.

The tasty little o’s definitely saved this breakfast mess.

While I was quite disappointed with my sorry attempt at a innovative breakfast, my mood remained positive because I was greeted with a wonderful little surprise when I opened the fridge to pack my meals to take to work today.

Soft Serve Bananas

I am not the proud owner of a food processor. I want one, but haven’t decided which one I should purchase (recommendations welcome!) and my mom let me borrow hers until Thanksgiving.

Using my loaner food processor, I was anxious to make the soft serve bananas Gena blogged about, saying they would “change your life.”

I started by placing chunks of two frozen bananas in the food processor.

I let them blend away for several minutes until the bananas were creamy and totally blended.

I cannot believe how delicious this is! It honestly tastes like creamy banana gelato. I was so impressed.

When I brought Ryan his bowl he loved it and asked what was in it. He was shocked when I said that bananas were the only ingredient. If you haven’t already, you must try this!

This morning I woke up in the mood for something super sweet for breakfast. My workouts also serve as brainstorming time for my breakfast and since I was running intervals this morning, I thought the traditional runner’s fuel would be a great breakfast: bananas! I decided to make a mock bananas flambe as a reward for an intense workout (thank you to Lisa for inspiring this recipe)!

After showering, I took a frozen banana out of the freezer and sliced it up, placing the banana slices on a griddle sprayed with cooking spray. After letting the fruit sizzle for a bit, I topped each slice with a small squirt of Smucker’s sugar-free breakfast syrup.

I then flipped the banana slices, allowing the syrup to caramelize into sugary goodness.

Before the bananas were done, I opened a cup of Oikos organic Greek yogurt to serve as a bead for the warm bananas. I placed the banana slices on the yogurt and sprinkled my breakfast bowl with Kashi Go Lean cereal for extra crunch.

This breakfast tasted like a decadent dessert. I would actually serve this for dessert in addition to breakfast for a healthy take on traditional bananas flambe. Tasty, tasty.

This was a great reward after a nice cardio session this morning! My belly is happy.
