Happy Tooth!

Though I do not enjoy the teeth-cleaning process, I love the feeling of super-slick teeth after a dentist appointment. So fresh and so clean, clean.

On the Road Again

After my dentist appointment, I hit the road to head back to Orlando to make it to work at a decent hour.

Fortunately traffic was virtually non-existent (Yay!) and I made it to the office in around 90 minutes, and that time includes a pit stop at Starbucks for a light mocha Frappuccino.

Lunch

My lunch today came right out of my emergency food drawer.

I keep my bottom desk drawer stocked with foods I can reach for in a pinch. It’s saved me several times when we’ve been completely out of food at home.

Today, I reached for a can of Progresso light chicken vegetable rotini.

I also enjoyed a coffee bean dark chocolate Attune bar and pistachio Greek yogurt pudding for dessert.

I “ugachaka-ed” my way through lunch today!

My mid-day meal was a roasted red pepper hummus and artichoke sandwich with a side of roasted veggies with garlic salt.

While my meal was yummy, it was my dessert that stole the show.

I give myself a pat on zee back for this one.

Dinner

When I’ve made tacos in the crock pot in the past, I’ve made them using ground chicken.

I changed things up a bit tonight because I snagged a pack of ground turkey from my parents’ house yesterday. Turkey tacos!!!

Turkey Taco Meat

I placed the ground turkey in the crock pot with a packet of reduced-sodium taco seasoning and 2/3 cup of water and let it cook on low all day.

When we got home, Ryan forked through the meat (which forms a big turkey-taco patty) while I got out the tortillas, salsa and lettuce.

I enjoyed two soft shell tacos and a plate full of taco salad.

Rainy Day Dinner

Is is just me or do rainy days make you want a warm dinner that makes your whole house smell fantastic?

With the chilly, rainy weather outside, Ryan and I decided to make a hot, aromatic dinner of Italian sausage with peppers and onions.

Sausage, Peppers and Onions

Our friends Pete and Merri made this dish at their Super Bowl party this year and Ryan and I loved it.

Thankfully Pete shared his recipe with me today and I was pleased to see that it was super easy. You know I love simple recipes!

All you have to do is cut Italian sausages with scissors (do not use a knife or the meat will come out of the casings) and put the meat into a 2-inch baking dish (sprayed with cooking spray) with sliced onions and peppers. You can then top it all with olive oil, salt and pepper or omit all the spices since the Italian sausage is very flavorful on its own. Easy, right?

We let the sausage and peppers bake at 375 degrees for about 45 minutes, stirring the mixture every once in a while.

I enjoyed my sausage and veggie mix on a big piece of Joseph’s lavash bread.

Dinner

For dessert I enjoyed a chocolate mint Attune bar. I received a package of these in the mail from the company today and was excited to try the bars.

It was so stinkin’ delicious! I gave Ryan a bite too and he agreed. 

I’ll do a full review on the bars once I try the various flavors. 🙂
