A Night In

Tonight Ryan and I felt like enjoying a night in. 

Sometimes there’s nothing better than a Friday night, curled up on the couch watching Say Yes to the Dress (or flipping back and forth between my wedding TV and Ryan’s basketball games). 

A New Find 

When I got off work today, we ran some errands and I found something awfully special in the check out aisle of one of the stores:

My friend Merri told me about these about a week or so ago and I thought I’d never find them! The flavor combination sounds kinda funky, but of course I had to try them!

The verdict? They were delicious and the flavor definitely leaned toward the peanut butter side more than the strawberry side (which was fine by me!). 

Dinner 

After enjoying two small handfuls of the new M&Ms, it was dinner time! 

I went the lazy girl’s route for dinner tonight and microwaved an Amy’s frozen tofu vegetable lasagna

Peek-a-Boo

This was one heck of a tasty frozen entree. It was about 10,000 time tastier than the Amy’s enchiladas we had for dinner last week. 

Dessert 

After dinner, Ryan said he was craving some cookie dough. I was in the baking mood so I took it as a sign to make some homemade oatmeal white chocolate chunk cookies. 

I followed a basic recipe for oatmeal cookies (but substituted oil for the shortening) and added chopped white chocolate candy melts.

The dough was sweet and hit the spot! Ryan and I both ate several spoonfuls before I baked a batch of the cookies for approximately 10 minutes.

Nothing smells better than cookies baking in the oven. 

I actually managed to pace myself on the cookie dough and had plenty of room for a decent-sized cookie when they were done baking. Yum!

I’m off to enjoy the company of my lil’ family and rest up for Sadie’s big day at the Doggie Derby tomorrow morning.

Dinner By Amy

Tonight Ryan and I enjoyed a dinner prepared by our friend Amy.

I entered a contest to select the new slogan for Amy’s products. Though my slogan apparently wasn’t up to snuff, I did get a consolation prize in the form of a coupon booklet.

I have never tried any of Amy’s frozen meals, mainly because I prefer to cook my own food and they’re pretty pricey, but since I had some coupons to use, I picked up a couple Amy’s frozen entrée’s at the grocery store on Monday night.

Since both Ryan and I wanted one of the black bean and vegetable enchiladas, I knew we’d need more than one ‘chilada each for dinner to feel satisfied.

With the enchiladas, we enjoyed a cup of Amy’s black bean vegetable soup and a side of roasted cauliflower.

At first bite, I was worried the enchiladas were going to be too spicy. I am such a baby with spicy food!

Luckily, as I continued eating, the initial spice-shock wore off a bit but unfortunately the enchiladas lacked a bit in the flavor department.

I ate every bite, but wasn’t blown away by this dish in the least. Ryan agreed and was even less of a fan of the enchiladas than I was. Oh well! You can’t win ’em all!  

Fortunately the black bean soup and roasted cauliflower were tasty.

Crock Pot Pork Chops and Apple Sauce

This is a long shot, but does anybody remember the episode of The Brady Bunch where Peter (I think) says “pork chops and apple sauce” in the goofiest voice?

Well, as a former Nick at Nite fan, I used to watch reruns of The Brady Bunch with my sister and we somehow picked up on this little quip.

The Place for T.V. Reruns!

Now, whenever I think of pork chops, I always think of apple sauce. This word-association inspired my dinner for tonight.

What are your favorite T.V. show reruns?

My favorite reruns are definitely episodes of Friends. Hands down, no competition there! After all, Joey and I do share an affinity for Peanut Butter Fingers!

Crock Pot Dinner

This morning before I left for work, I prepped dinner in the crock pot.

I started by trimming the fat off pork chops before placing them in the crock pot and covering the meat with applesauce and cinnamon. I let this cook on low for about eight hours.

When I arrived home from work, the aroma smelled fantastic. I bet it was driving Sadie crazy all day!

Cinnamon Apple Sauce Pork Chops

Ingredients:

  • 4 pork chops
  • 3 c. apple sauce (or enough to coat the meat)
  • Several dashes of cinnamon

Directions:

Trim unwanted fat from pork chops. Place in a slow cooker and top with apple sauce and cinnamon. Stir mixture so cinnamon and apple sauce coat the pork chops. Cook on low for 6 – 8 hours.

The chops were pretty good! Nothing amazing, but we agreed we’d make them again.

We paired the choppers with a bowl of Amy’s organic black bean vegetable soup.

I love Amy’s products for the simplicity of their ingredient list. Here are the ingredients in this soup: (VEGAN) ORGANIC BLACK BEANS, FILTERED WATER, ORGANIC ONIONS, ORGANIC CARROTS, ORGANIC CORN, ORGANIC POTATOES, ORGANIC CELERY, ORGANIC LEEKS, SPICES, ORGANIC CILANTRO, ORGANIC GARLIC, SEA SALT, ORGANIC HIGH OLEIC SAFFLOWER AND/OR SUNFLOWER OIL, ORGANIC BLACK PEPPER.

I recognized every last one except for high oleic safflower oil – huh??? A quick Wikipedia look up informed me that safflower is “a thistle-like annual, usually with many long sharp spines on the leaves.”

Plants and flowers = good for you, right? The use of safflower in my food is a-okay by me.

This soup was tasty! Both Ryan and I gave it an enthusiastic thumbs up. 😀

Holiday Movie Night

Tonight I’m heading to my friend Kaitlyn’s house for our weekly girl’s holiday movie night. The movie on the agenda for tonight is Love Actually.
