Salsa Chicken + Curried Cauliflower

Who says you can’t cross cultures when creating a delicious dinner?

Tonight’s dinner featured the flavors of Mexico and the flavors of India.

What can I say? I’m an equal opportunity eater. 😉

The Mexican portion of my meal included salsa chicken, which I prepared by placing two chicken breasts and half a jar of salsa in the crock pot and let it cook on low while I was at work (6 – 8 hours).

When I arrived home, I removed the chicken from the salsa and pulled the moist meat apart using two forks.

The flavors of India debuted on my plate in the form of curried cauliflower, which I enjoyed along with the salsa chicken.

To make the cauliflower, I tossed approximately two cups of chopped cauliflower florets with a bit of olive oil, salt, pepper and curry powder, before roasting the vegetable at 475 for 15 minutes, flipping the florets halfway through.

Curry is definitely growing on me…

I gotta get goin’ because Ryan needs the computer tonight to complete his fantasy football draft this evening.

Today is my one-year blogging anniversary.

On September 7, 2009, I started Peanut Butter Fingers and began an exciting endeavor that has proved exciting, challenging, rewarding, educational and FUN.

What I Do Best

When I first began blogging, I remember feeling so self conscious about taking pictures of my food. I mean what kind of a nut job takes pictures of a salad or a scoop of peanut butter?

Fast forward one year, and snapping pictures of my meals feels like second nature.  Bloggers are a rare breed of crazy, I’m tellin’ ya.

Because of You

I started my blog because I love to write and enjoy learning about health, food and fitness.

I continue to blog because of YOU.

You guys know I get all mushy-gushy from time to time and my one-year blogging anniversary sparked that “Oh I just love you guys so much” emotion in me.

Thank you for reading this little creation of mine. Your comments, support and emails truly mean the world and keep me motivated to blog day in and day out. For those of you “silent readers” out there, you are just as important to me I send a big, overbearing hug your way! 😀

Not-So-Quiet Brain = No Yoga

I normally come back to work after long holiday weekends feeling tired and in need of another long weekend.

Today, however, that is not the case. I actually feel rested, relaxed and rejuvenated. What a pleasant surprise.

I think I felt a little too rested because I just couldn’t get into the yoga class I planned to take this morning. I lasted about 5 minutes in the class but my silly brain wouldn’t shut up, so I headed into the cardio room at my gym to sweat it out.

My workout ended up a lil’ somethin’ like this:

  • 15 min. elliptical
  • 10 min. stair master
  • 10 min. elliptical
  • 5 min. stair master
  • 10 min. elliptical

I was clearly in the mood to jump around a lot this morning. I also saw people drop off magazines I wanted to read, which made me hop on and off the machines a few times.

Breakfast

Breakfast was one of my favorites.

A simple peanut butter and fresh fruit sandwich, prepared on a toasted sweet wheat Alternative Bagel with juicy nectarine slices and a couple of dashes of nutmeg.
