Chewy Butterscotch Bars

Tonight I am headed out to my friend Cherayne’s apartment to enjoy dinner with some of my girlfriends. Cherayne is making black bean burgers (yum!) and we’re all bringing a little somethin’ somethin’ to enjoy as well.

With my sweet tooth, it should come as no surprise that I’m bringing a dessert… that is if there’s any left by the time I head out of the house!

When I arrived home from work, I whipped up a batch of chewy butterscotch bars and they turned out oh-so-moist, sweet and tasty!

Chewy Butterscotch Bars

Ingredients:

  • 1 12-oz package butterscotch chips
  • 2 sticks of butter (1 cup)
  • 1/2 c. firmly packed brown sugar
  • 1/2 c. sugar
  • 3 tbsp. ground flax seeds
  • 3/4 c. water
  • 2 tsp. vanilla extract
  • 2 c. flour

*Note: You may substitute 3 eggs in place of the ground flax seeds and water.

Directions:

  • Preheat oven to 350 degrees
  • Microwave butter and butterscotch chips until melted, stirring regularly (about 2 minutes)
  • Stir sugars, flax seeds, water and vanilla into the butterscotch and sugar mixture
  • Stir in flour
  • Pour into a 13 x 9 inch pan, sprayed with cooking spray
  • Bake for approximately 25 minutes

PBF: What’s in a Name?

Let’s breeze through lunch today because I wasn’t really feelin’ it.

Don’t get me wrong, it was totally tasty, but I just wasn’t in the mood to eat what I packed for lunch this afternoon. It was a bit of a bummer, but I inhaled the whole thing and powered through because I’m tough. 😀

Salad Time!

Today’s lunch was a big ol’ salad that included:

  • Spinach
  • Arugula
  • Grape tomatoes
  • Beets
  • Cucumber
  • Red pepper
  • Green pepper
  • Pork tenderloin
  • Italian dressing

My favorite part of this salad was the beets. I love ’em!

PBF: What’s In a Name?

I remember when I began tossing around the idea of starting a blog. I had all sorts of crazy ideas when it came to the name of my blog.

I wanted my blog name to convey a love of food without seeming too overly healthy because, let’s face it, I’m not about to live my life without indulging in mini Oreo cheesecakes, red velvet cake brownies or whipped cream and chocolate wafer cookie stacks.

Plus, would any of you really want to visit http://www.AsparagusIsDelicious.com? I didn’t think so.

The blog name I initially settled on was “Soft Serve and Cheez-its.” I even created a blog with this name through Blogger, but didn’t post more than once. It just didn’t feel right.

What Could Have Been...

Ryan was actually the one who came up with the name of my blog. He was always catching me in the kitchen with my finger in the peanut butter jar and said I was the queen of peanut butter fingers. When he suggested “Peanut Butter Fingers” as the name of my blog, I was instantly smitten.

Doing What I Do Best

Not only did the name “Peanut Butter Fingers” highlight one of my all-time favorite snacks, but I felt like it also conveyed my laid-back approach to eating. Someone who thinks it’s okay to eat peanut butter straight from the jar using their finger can’t be someone who is rigid about healthy eating or a stickler for diets, right?

And there you have it! The history behind the name of my blog! 😀

I love that song by 38 Special. I heard it in the gym first thing this morning and it set my day off on the right foot! There’s something about amazing ’80s music that just does it for me. 😀

'80s Night!

Workout

With “Caught Up in You” jammin’ in my head, I danced my way into BodyPump this morning for a total-body strength training workout.

I felt like my mind was racing a mile a minute throughout the class. I found myself thinking about everything but BodyPump. By the time we were laying on our mats to do some ab work, signaling the end of the class, I was shocked at how fast the class flew by!

Post Pump, I leashed up Sadie for a 40-minute walk around the lake near my apartment. I don’t want to jinx it, but the weather in Florida lately has been wonderful! It’s remained in the ’80s and hasn’t creeped into the hotter-than-heck ’90s for a few days. Woop, woop!

Breakfast

I prepped my breakfast last night which made it super easy this morning!

Last night I cooked up a small batch of pearled barley and let the whole grain cool down overnight in the fridge.

This morning it was ready to be used in a barley breakfast bowl.

Peach + Barley Yogurt Bowl

To make my barley breakfast bowl, I combined a cup of Greek yogurt with the cold cooked barley and topped it off with peach slices and nutmeg.

Oh Yum

I love the nuttiness and chewy texture barley brings to the table.

Gnarly Barley

As I typed up this post, I looked back through some of my old posts about barley and stumbled upon this one that I posted during my first month of blogging. Holy crap-tastic pictures. Thank goodness I invested in a better camera.

Along with my barley breakfast bowl, I also enjoyed a tumbler full of Barnie’s French vanilla coffee that I snagged for the freezie at my gym.

I practically burned off my tongue after the first sip.

The Heat is On

I like really HOT coffee, so I took my time sippin’ it rather than gulping it to prevent the loss of additional taste buds. I’m so scrappy. 😉
