Versatility of Oats

Oats are so versatile. They can be used in oatmeal, meatloaf, pancakes, cookies (my favorite!) and more!

This morning I used old fashioned oats to create protein-packed oatmeal pancakes for my mom, sister and me to enjoy before heading off to church.

To make the pancakes, I blended the following ingredients together using an immersion blender:

  • 1 c. old fashioned oats
  • 1/2 c. fat-free cottage cheese
  • 8 egg whites
  • 2 tsp. vanilla
  • 1/2 tsp. cinnamon
  • 1/2 tsp. pumpkin pie spice

The pancakes were ready less than five minutes after I poured the batter onto my hot griddle, which I sprayed with cooking spray prior to pouring the pancake batter on to cook.

I enjoyed four pancakes topped with syrup and dusted with nutmeg.

The added protein from the cottage cheese and egg whites in these pancakes, coupled with the fiber from the oats help these pancakes have some serious staying power.

Ryan’s Back

After church, my mom, sister and I headed off to the Tuscawilla Country Club in Winter Springs to check it out because my sister booked a room at the country club for my bridal shower in September. The room was bright and the place looked nice and classy! I wasn’t really expecting a shower, so I was pretty excited when my sister told me she was planning one. 🙂

When we arrived back home Ryan and his buddies were back from their bachelor cruise! It was so good to see them all in one piece! It sounds like they all had a great time and no one lost too much dignity aboard the ship. 😉

Since we all were hungry, we headed out to Jason’s Deli for a quick lunch.

I decided to hit up the salad and soft serve stations.

I combined chocolate mousse with vanilla soft serve to make my lil’ dessert. It was so good that I just had to go back for seconds… err, thirds. 😉

Once everyone was finished eating, we headed back to our apartment to relax for a bit before my mom and sister packed up their goodies to head back to St. Pete. I had such a great time with them enjoying our weekend of girly fun and was sad to see them go. Not only did we have a blast at the wine tasting and tea, but we also got a lot of good wedding-related stuff done as well. All in all it was a great weekend.

Cookie Time

Once my mom and sister were on the road, our apartment was dominated by hungover, sleepy boys. I loved hearing about the shenanigans from their cruise and am happy they seemed to have such a great time. I’ll have to post a picture of the hot pink (yes, pink!) t-shirts they all wore. They’re hysterical!

After listening to cruise stories, I headed into the kitchen to make some cookies.

I love baking but don’t like having a ton of baked goods around the house because I can literally pack away an entire batch of cookies in one day. I try not to bake too much since my self control around sweet treats is sub-par. Buuut, since I had several boys loungin’ around, I jumped at the opportunity to make a batch of homemade cinnamon oatmeal cookies for everyone to enjoy.

Gotta love the versatility of oatmeal. Any foodthat can be made into a tasty baked good is a fantastic food in my mind!

The cookies were devoured within five minutes, and  I enjoyed three myself. I am a cookie monster!

Ryan’s friends are about to head out, so I’m off to say goodbye.

Ryan and I have plans to run s couple of errands and cuddle on the couch for the rest of the day. I missed my guy! 😀

  1. I just baked some oatmeal cookies as well- and had a bit too much batter in the process. I love oatmeal! Sounds like you had a great end to your girls’ weekend. I’m sure you’ll have a great shower, they’re so much fun (and you’ll get some fun kitchen stuff too)! Enjoy the rest of your weekend!

  12. WOW!!!!! Those pancakes look amazing……well the cookies do too =D. I COMPLETELY understand about loving to bake but not doing so often, I can usually power through just about anything chocolatey even if I’m not that hungry =P.

  13. Oatmeal really is such a wonderful food. I swear it tastes good in just about anything. Lately I have been doing the overnight oats thing and it is delicious! I may be converted to some protein pancakes, though. Your look pretty good!!

  16. The pancakes sound like they would be filling! Which is my main problem with pancakes in the first place, is that they don’t last me.

  18. Don’t you hate that about baking?! I love to bake but my self-control around baked goods is seriously WEAK. Baking for other people is a great compromise: save a couple cookies for yourself (and maybe lick the batter bowl) and give the rest away before you cookie monster them! 🙂
