Sloppy Joe, that is. 😀

Tonight’s dinner featured sloppy joes paired with roasted Brussels sprouts.

I made the ‘joes using lean ground beef, a chopped onion, apple cider vinegar and ketchup.

The flavors blended perfectly to create a tangy sloppy joe mixture.

I filled my bowl with the beef and Brussels sprouts and went back for seconds of the meaty goodness!

Post-Work Yoga

After work today I high-tailed it home to hit the gym for some post-work yoga.

For a girl who had not experienced a good yoga class in her entire life only a month ago, I have come a long way in such a short time. Now I find my body craving the good stretch of a yoga class.

Since I already worked out this morning, I wanted to take the class nice ‘n’ easy and just workout some of the kinks in my body. I had no idea how fantastic yoga feels on your hips. All the hip-opening stretches are amazing.

Not a Veggie in Sight

I typically try to incorporate veggies into my lunch and dinner every day. Today, however, not even a little carrot popped up in my mid day meal.

Don’t worry though! My lunch was not completely produce-free.

I did manage to sneak an apple onto my plate for good measure.

Today’s lunch included a bagelwich, made with a sweet wheat Alternative Bagel and chocolate PB2.

On the side I enjoyed a freshly sliced apple with a dollop of peanut butter and a cup of Chobani Greek yogurt for a protein punch.

I think the combination of whole grains, fruit and healthy fats still make this a healthy meal even without a veggie in sight. 😀

Forethought Makes Breakfast a Breeze

I worked up quite a sweat at the gym this morning!

I mentioned that I was beginning to feel a little restless about my cardio workouts last week so I was determined to change things up a bit today.

Throwing some intervals into the mix really fights boredom, so I completed this random workout:

Treadmill

  • 5 min., 4.5 pace, 5.0 incline
  • 20 min., 9.0 pace for 20 sec., 4.5 pace for 40 sec., 1.0 incline
  • 5 min., 4.5 pace, 5.0 incline

Elliptical

  • 20 min.

Those intervals will make ya sweat!

Breakfast

After sweatin’ it out, I came home to assemble my breakfast.

Last night, I made protein pancakes that I could reheat this morning to save some time.

My batter included:

  • 1 scoop All the Whey cup cake batter protein powder
  • 1/8 c. cottage cheese
  • 1 egg white

I blended everything together with my immersion blender so there were no clumps remaining.

After cooking the pancakes on the griddle, I stored them in the fridge overnight.

This morning I heated the protein pancakes in the microwave and topped them with a sliced apple, cinnamon and syrup.

Obviously I’m going to go with the vizsla. I also love great danes, German short hair pointers, pugs and basically a bazillion other breeds. 😉
