Please excuse me as I breeze through dinner. I hope you don’t mind, but believe me, dessert is what ya wanna read about tonight!
For dinner I made eggplant medallions, prepared the same way I made them last week, but without chicken and with Brie instead of shredded cheddar cheese.
On the side I enjoyed roasted cauliflower, which came out of the oven first and was devoured before the eggplant medallions were done cooking.
Sometimes ya just can’t wait!
I also enjoyed three large Monterey Pasta Company lemon shrimp ravioli, which I received from the company to sample.
I was a little apprehensive about this particular flavor because a lemon flavor in ravioli didn’t really call to me.
I was pleasantly surprised though and really enjoyed the big chunks of real shrimp meat in the ravioli.
Though dinner was yummy, dessert was yummier.
Dessert
Tonight’s dessert was comprised of only three ingredients. Three *delicious* ingredients:
- 1 egg
- 1 c. sugar
- 1 c. peanut butter
Combine those three bad boys and bake at 350 for 10 minutes and what do ya get?
Flourless peanut butter cookies!
For as much as I love peanut butter, I have a hard time finding really good peanut butter cookies.
I often think peanut butter cookies are too dry or floury. I want moist peanut butter goodness and – trust me – these cookies deliver.
Sadie was loving the leftover peanut butter.
I had three bite-size cookies for dessert.
The cookies don’t really expand in the oven, so the dough is perfect for shaping into whatever shape you want.
Since Ryan is out at a soccer game right now, I made him three special cookies to enjoy when he arrives home:
I hope he likes his sweet treat! (I assure you the cookies will be devoured by the cookie monster *me* if he doesn’t 😉 ).

YUMMM those look amazing but dangerous! Whenever I have small cookies I end up eating WAY too many because I can not say no! However, I might have to try these with almond butter anyway.

The second I saw those cookies I ran to the kitchen to try them. There’s nothing worse than dry cookies and these are the total opposite. They are so easy! I did half the batch plain and mixed chocolate chips into the other half. Might be the best thing I’ve ever eaten!

I make these as part of my contest prep to help with the sweet cravings. To help clean them up a bit, you can use splenda and an egg white and get the same thing, just a little bit more crumbly. SO GOOD!

omg, i make those ALL THE TIME!! literally, they are GONE at my house in like a day. i also add just a tsp of vanilla, then i dip a fork in granulated sugar and do a criss corss pattern on top of the cookies. yum! my fav part is licking the bowl ! 🙂

What did I do wrong Julie…when I tried these…they were so runny that they made a big thin blob and I couldn’t even bake them!! I used everything above (no substitutions)
what kind of pb did you use? i don’t know that it would work w/ runnier pbs (like naturally more).
Hum…I just used an organic Costco brand (Kirkland…I think). The batter WS delicious! Guess I will have to try again…oh darn! haha! 🙂

Flourless peanut butter cookies. Amazing. Do you have a vegan recipe for this? I could try egg-replacer but i’m not sure that will turn out very well since it’s not moist like eggs are, or even applesauce would do right?
hmmm i’ve heard that a tbsp. of ground flax seed + 1/4 c. of water for each egg will work to “veganize” some recipes. maybe that would work for this one too???
