‘Dillas on the Grillas

The weather warranted another dinner on the grill. Well… kind of.

Ryan and I were feelin’ cheesy quesadillas tonight and figured we could add some protein to the mix by throwing grilled chicken breasts into the ‘dillas.

While Ryan grilled the chicken, I got all the “fixins” (as Paula Deen would say) ready for our quesadillas.

Fixins

Our ‘dillas included:

  • Cheese
  • Corn
  • Grilled chicken
  • Cauliflower
  • Spinach

Yum

On the side we had roasted broccoli for some added nutrients.

Dessert

Ryan and I are working our way through our Easter goodies.

Tonight we both enjoyed two Oreos and a small bowl of Swedish Fish. Yum!

Dessert

Portioning out the goodies in a small bowl helps prevent me from eating a billion Swedish Fish. Sitting down to eat them out of a small dish is a great way to help me thwart overindulgence.

After dessert, I got to work in the kitchen again.

I promised to bring in a sweet treat for the winner of our March Madness cake vs. pie bracket at work.

Even though red velvet cake lost in the finals, everyone in my office preferred red velvet cake to cheesecake, the actual winner. I decided to make a red velvet dessert to bring into work, but didn’t want to make a big ol’ cake. Instead I made red velvet cake brownies!

They’re currently baking in the oven and smell deeeelicious.

I hope they last through the night… 😉

A Winner is Crowned

The epic battle came to a close today.

In the cake vs. pie face-off, PIE took the cake. 😉

March Madness

The competition, which took place on Jezebel.com, ended when cheesecake beat red velvet cake by receiving 59% of the votes. (Apparently cheesecake is a pie because of its crust.)

I finished third in my work bracket standings. I had ice cream cake going all the way, but sadly it lost to red velvet in the quarter-finals.

So, do you agree? Would you pick cheesecake over red velvet cake?

Ummm, no, I wouldn’t. Red velvet cake ALL THE WAYYYY!

A Spoonful of Sugar Would Have Been Nice

Remember that song from Mary Poppins that goes,  “a spoonful of sugar helps the medicine go down?”

Well, I think I needed a spoonful of sugar to help my sugar-free Jello knock-off dessert to go down. It was NOT GOOD and tasted like cough syrup. Bleh. 😦

I love sugar-free Jello and eat a little snack pack after lunch almost daily. At the grocery store last night I saw a different brand’s sugar-free gelatin on sale for less than half the cost of Jello.

Being the savvy shopper that I am, I picked up a bulk-size pack of the stuff. Bad move. I don’t think I’ll be enjoying anymore Tylenol-flavored desserts in the near future.

Luckily, that was the only fail of my lunch.

My grilled zucchini and roasted red pepper hummus sandwich, roasted cauliflower and two dark chocolate Dove eggs saved the day!

I also had a cup of Greek yogurt for some protein which alluded any photographs.

My Jello knock-off dessert was the most disappointed I’ve been in a product in a while.

What product or food have you tried recently only to be disappointed?

I’ve Gotta Go Back

Yesterday when Ryan and I were walking out to our car after buying our groceries, he stopped cold and said, “I’ve gotta go back. I forgot my peanut butter.”

Though I was anxious to get home and make dinner, I completely understood his need for pb.

What is something you need to buy every week at the grocery store?

I always purchase Greek yogurt and fresh veggies. They’re a must for me!

Breakfast

Peanut butter made its way into my breakfast this morning.

I topped a toasted sweet wheat Alternative Bagel with creamy peanut butter.

I ❤ Peanut Butter

Naturally I also had a peanut butter finger (or two).

Breakfast also included a bowl of fresh strawberries, which were on sale for $1.25/pint yesterday!

Any breakfast that includes peanut butter is a good one in my book. 😀

Workout

This morning Ryan woke up before me to get to the gym earlier and when he came back he said the weather outside seemed like perfect running weather.

Say no more!

I leashed Sadie up for a run and we covered just over five miles. She was as chipper as ever!

I love that the cold weather is finally behind us and I can run outside in the mornings again. I get so bored on a treadmill and really enjoy the peacefulness of a morning run outside.

I hope your Tuesday is off to a good start!
