As Donkey from Shrek would sing, “I’m all alone… there’s no one here beside me…”
(Sadie just gave me a nasty look for discounting her company.)
Ryan left around 6 p.m. for soccer game tonight, so I was on my own for dinner. You know what that means… Breakfast fo’ dinner!
Dippy Eggs!
Maybe I’m a sucker for good marketing, but I really do think Eggland’s Best eggs taste better… I don’t know how to describe it… I just like ’em! I can’t taste the “extra vitamins” they claim to have (nor would I want to), but I can taste deliciousness.
I made two dippy eggs and toasted a whole wheat Arnold sandwich thin for yolk dippin’.
On the side I enjoyed strawberry sorbet which I made by blending a couple large handfuls of frozen strawberries in the food processor. How’s that for a healthy dessert?

Peanut Butter Fingers at Her Finest
Look what arrived in the mail for me today:
Hell's Kitchen Homemade Peanut Butter
PB Delight
Peanut Butter Fingers!
My friend Krystina sent me this amazing jar of deliciousness from Hell’s Kitchen in Minnesota. I honestly cannot express in words how good this tastes.
Obviously a lot of this (below) has occurred this evening… and I don’t see it stopping any time soon.
Peanut Butter Fingers in Action
As both a peanut butter lover and a texture fanatic, this little jar satisfies two of my favorites in every finger full!
Five Fun Foodie Facts
Ally from Sweet & Savory told me about a fun little foodie questionnaire yesterday, so I thought I’d give it a go!
When did you discover your love for cooking/baking?
Though I’ve always loved baking, I discovered my love for cooking about a year after I graduated college… There’s only so many Lean Cuisines, hot pockets and instant oatmeal packets a girl can handle. I slowly stared making homemade dinners and experimenting more and more. Turns out it’s pretty darn fun!
Favorite food to make?
Baked goods! I think homemade cookies (especially Christmas cookies) are my favorite thing to make. The fact that I get to enjoy lots of cookie dough may or may not be the reason behind this selection…
Top eat of all time?
Easiest decision ever: The hot fudge sundae from Houston’s restaurant in Winter Park, Florida. It’s unbelievale. The ice cream is the creamiest vanilla ice cream, and it’s topped with thick, decadent hot fudge, candied pecans and tons of whipped cream. I could eat it for breakfast, lunch and dinner every day… and become a whale.
Most disliked food?
Catfish. Never tried it, never will. It disgusts me. (My reasoning may be found here.)
Food you still haven’t tried to make but want to?
Bread. I’ve made biscuits and muffins, but I’ve never attempted to make a homemade loaf of bread. This is probably a good thing since I’d likely devour the entire thing in 1.5 minutes.

…And I’m off to cuddle with Sadie and read Wicked!
I’m not gonna lie, the first quarter of the book was pretty awful. Thankfully, I think it’s finally starting to pick up as I enter the second half. Phew! At least I’ve only heard fantastic things about the musical. I can’t wait to see it on Saturday!!!
My lunch today was a Plain Jane sandwich. Nice ‘n’ simple.

Deli sliced rotisserie chicken breast
Spicy mustard
Plum tomato
Melted cheddar cheese

Mid Day Meal
On the side I enjoyed a couple of dill pickles and carrot sticks.
Whenever I open a new jar of pickles, I always think of Ellen’s stand-up routine about how ridiculously full the jars are.“I wish they packed potato chips the way they pack pickles!”
This morning was a little out of the ordinary. Every weekday morning my routine is pretty much the same:
Gym
Walk Sadie
Shower
Work
Today rather than walk Sadie after my workout, I loaded her up into my car for a morning trip to the dog park!
Hello There
The sunrise looked beautiful when we arrived.
Good Morning, Sun
I love how dogs have no idea that mornings are meant to be calm. The small handful of dogs that were at the park were energetic and quite frisky.
"Go Ahead... Just Trrrry To Take It"
"Hi Mama!"
Sadie seemed to thoroughly enjoy her morning trip to the park. It’s good to change things up a bit!
Workout
I took that same mentality to my workout today and made sure to change the speed frequently during my cardio session.
My 40 minutes on the treadmill looked like this:
4 min. – 7.5 incline, 4.0 pace
5 min. – 1.0 incline, 6.5 pace
4 min. – 7.5 incline, 4.0 pace
5 min. – 1.0 incline, 6.5 pace
3 min. – 2.0 incline, 6.5 pace
3 min. – 1.0 incline, 7.0 pace
1 min. – 1.0 incline, 8.0 pace
1 min. – 1.0 incline, 6.0 pace
1 min. – 1.0 incline, 8.0 pace
1 min. – 1.0 incline, 7.0 pace
3 min. – 1.0 incline, 6.5 pace
9 min. – 7.5 incline, 4.0 pace
I finished up with 15 minutes of light cardio on the elliptical. I rocked out to “Giddy On Up,” a super fun song by Laura Bell Bundy (aka Elle from Legally Blonde the Musical).
Breakfast
Since I was changin’ things up left and right this morning, I changed up my typical bowl of oats with All the Whey cupcake batter protein powder by adding a bunch of frozen strawberries to the mix before microwaving everything.
Strawberry Cupcake Batter Oats
The mixture was hot, delicious and thick.
