Crock Pot Chicken Tacos

After such a successful slow cooker meal last night, we decided to keep the ol’ crocker out for tonight’s dinner.

Ryan and I had a fiesta for dos tonight and enjoyed crock pot chicken tacos. Another easy-peasy recipe that only requires two ingredients (not counting water):

  • One pound ground chicken
  • One packet taco seasoning

The Goods

Directions:

Place the chicken in the crock pot and top with seasoning packet and 2/3 cup of water. Stir and fork through the chicken so it’s not sitting in the pot in one big clump.

Let it cook on low for six to eight hours. The chicken will form into one big chicken patty, but that’s okay! Just use a fork to mash it up.

We enjoyed our chicken in tacos with lettuce, tomato, and salsa. I prefer hard shells while Ryan likes his soft.

Maybe Ryan likes the tortilla-style tacos because he’s such a softie. Okay, that’s a lie. The man does not cry. Ever.

As Monica from Friends would say, he’s like Chandler and has no soul. 😉

As I type this, I realize this is a reflection on my lack-of-soul as well, seeing as how we’re getting married and are supposed to be soul mates. Ah well. I love ya, Baby! 🙂

After I’m done posting for the night we’re off to cuddle with Miss Sadie-dog and not-cry together.

Sadie does enough crying and whining for the both of us. I remember a magnet I used to see on the fridge of my friend’s parents when I was growing up. It read: “Would you like some cheese with that whine?” This would suit Sadie perfectly.

Key Lime Cupcake

Before I sign off for the night I wanted to leave you with a delicious picture of tonight’s dessert.

I bought this cupcake from Sweet!, a cute cupcake and frozen yogurt shop, as a surprise treat for Ryan since I know it’s his favorite flavor. 

The icing is creamy and even has specs of vanilla bean in it! Wow-zaa! The cupcake itself has a creamy key lime filling. At the bottom of the cupcake is a sugary graham cracker “crust.” Oh-so-good!

Chicken Soup for the Soul

Chicken soup may be the most soothing meal in the entire world. It can drive away a cold, fill a house with an amazing aroma and make a belly warm after a day of playing in the snow.

Lunch today was leftover chicken soup from Monday night’s dinner.

I added broccoli florets to my bowl to beef it up a bit.

After sitting in the fridge for a couple days, I think the broth became even more flavorful. I loved every last slurp.

After you’ve enjoyed a big ol’ plate full of turkey, sweet potato casserole, green beans and stuffing, you know you’ll somehow miraculously have room for dessert.

Mine is definitely good old fashioned pumpkin pie (with extra whipped cream). I actually like it cold for breakfast the day after Thanksgiving, too! 🙂

Holiday Movie Night Kickoff

The kickoff to our once-a-week holiday movie night (now through Christmas!)  was a success!

Take away the movie, add in some amazing friends and lots o’ laughs and the night was great! I say “take away the movie” because Mixed Nuts wasn’t exactly a holiday classic in my opinion. We made it though about 30 minutes before completely ignoring the film and talking and catching up instead. Bad movie and all, holiday movie night was fun!

Work out

I woke up this morning and did not feel like going to the gym. I told myself I’d machine-hop my way through a cardio workout to keep my interest alive. When I grabbed my iPod near our mail stash, I realized the new issue of Cooking Light arrived yesterday, so I had some fun reading to fuel my workout.

Do you read magazines or watch T.V. when you work out?

I will read magazines when I’m on the elliptical, but that’s pretty much the only machine where I’m able to read since I’m not bouncing around too much. I’m not a big television watcher when I work out. I definitely prefer the eclectic mix of music on my iPod as my background noise.

Today’s workout consisted of 10 minutes on the stair master, 10 minutes on the arc trainer and 30 minutes on the elliptical. Not an intense workout, but I still was sweaty when I left and happy I went.

Hot Breakfast

I originally planned to eat Greek yogurt for breakfast, but changed my mind after a chilly walk with Sadie. Hot oatmeal sounded much better!

I added a scoop of All the Whey cup cake batter protein powder to my oats before microwaving them until they became thick, hot and creamy.

I topped my cake batter oats with thawed raspberries for a punch of color and flavor.

Christmas Find

I always bring my lunch to work in a random paper bag with handles that I receive from stores like Bath and Body Works when shopping. They actually work really well and typically last a couple weeks before ripping.
