Since I didn’t have a chance to make it to the grocery store yesterday since I was hungover wanted to be sure to post last night after traveling all day, my lunch today featured yummy goodies I had on hand.

  1. Well…living with an Itlian we ALWAYS have cheese on hand, so when there is nothing to eat…there is always a grilled cheese waiting to be cooked!

  2. I love cheese quesadillas …mainly anything with cheese…

  3. ahh today was SO one of those days that I had to make due with what was at home since I got ack from my trip around 11pm last night!

I had some turkey chili on hand from Trader joes and also some veggies…i always have oats and PB and eggs in the fridge so that was my breakkie! oh and frozen fruits and veggies galore!

love that mix you have ๐Ÿ™‚

  4. Yumbles! I had pumpkin in Fage (also nonfat greek) yogurt with a scoop of vanilla whey and a dash of pumpkin pie spice. MY FAV! HOWEVER, crunchies like almond would have been even better!

  5. I often eat cereal if I don’t have any food or I will make a plate of cheese, nuts and veggies.

  6. My fall back meals are almost always a sweet potato (somehow i always have one lying around the kitchen) or pb/almond butter and banana sandwiches… so good!

  8. Hey – thanks for the info about the Cooking Light deal. I just ordered a one year subscription!

  9. Beans! With whatever. Alone, in a tortilla, mixed with rice, with veggies…beans are where its at!

  10. Peanut butter on any bread-based thing. That’s pretty much always my fall-back.

  11. Cooking Light is my favorite! I made two meals out of it last week! So good.

My fall-back meal plans usually include a bagel of some sort…I’ve learned to keep them on hand. Pizza bagels are quick and easy! I also keep on hand some mac and cheese (Annie’s, usually) since Annie’s is actually pretty healthy (you know, for mac and cheese), and I just veggie it up with some frozen veggies on hand. Easy and delicious!
