How do I like my eggs? Dippy!

Apparently “over easy” is the proper term for my favorite kind of eggs, but I was grew up in a household with two parents who were born and raised in Pennsylvania, so we call eggs with a runny middle dippy.

I think this term makes a lot more sense than “over easy” anyway. What’s the point of a runny yolk? To DIP toast in it, of course.

Breakfast for Dinner

I love eggs but rarely crave them for breakfast. Yummy, salty eggs are a fantastically easy and satisfying dinner.

Tonight I fried two dippy eggs and a slice of Canadian bacon on the griddle and popped a whole wheat Arnold’s sandwich thin in the toaster.

Can dinner get much easier?

This dinner may also be the cheapest dinner in the world. Eggs are very inexpensive and at $3 for a pack of six Arnold’s sandwich thins, my toast was only 50 cents! I think my breakfast for dinner meal was under $1.50. Cha-ching! Money in the bank (that will be spent on the wedding… ;)).

Speaking of weddings, tonight I popped in this movie to entertain me while I pack for my trip to Arizona tomorrow.

Best Movie Everrr!

My whole family is obsessed with this movie. The father and mother remind me so much of my parents. 🙂

Tonight I will spend the majority of my evening packing for my trip to Arizona to see some friends from high school. I’m so excited!!! My best friend Michaela is flying to Phoenix from Indiana and we’re both arriving in the early evening (I’m working a half-day tomorrow) and staying with two of our friends who live in Scottsdale.

Even though I’m excited to see my friends, I’ll definitely miss Ryan and my little puppers.

I’m getting some quality time with Miss Sadie tonight because she likes to help me pack (and by help me I mean she likes to sit on top of my duffle and jump on each new item of clothing I add to the bag). Ryan is playing in a soccer game tonight so he’s not here to keep me company.

I made sure to snap a picture of Ryan with a wonderful award he won at work before he headed out to the fields. Yay Ryan!

Homemade Cinnamon Sugar Lavash Chips

Since I opened a can of pumpkin for my breakfast this morning, I wanted to use the “fresh” squash in my lunch today as well. There’s no such thing as too much pumpkin for this gal.

Last night in preparation for my pumpkiny lunch, I made cinnamon and sugar Lavash chips. I started by cutting up a Joseph’s lavash bread into pieces. I placed them on a cookie sheet sprayed with cooking spray before spraying the chips lightly with the spray as well. I dusted them with a sprinkling of cinnamon and sugar and baked the chips at 350 for approximately seven minutes.

They came out crispy and sweet! I snacked on a few before baggin’ them for today’s lunch.

(Truth be told, I burnt my first attempt at these chips. Apparently cooking dinner, putting away dishes and prepping for today’s meals makes it easy to forget about some little chippies baking in the oven.)

I’m a big fan of chips and dip, so I used pumpkin to create a sweet dip for my chips. I blended equal parts pumpkin and cottage cheese with a little sweetener, cinnamon and pumpkin pie spice.

Cardio Hodgepodge and a Bowl of Pumpkin Fun

Before going to bed last night I planned on going to my normal Thursday spinning class when I woke up in the morning.

When the alarm went off, I just wasn’t feelin’ it. I love the instructor who teaches spinning at my gym on Thursday, but I was not in the mood to spend 45 minutes on a bike.

What workout do you do when you’re just not in the mood?

A mindset like mine called for a cardio hodgepodge workout! My random cardio workout ended up like this:

  • 10 min. stair master
  • 10 min. run
  • 10 min. incline walking
  • 20 min. elliptical

This workout made me sweat and kept me entertained (as did the Cooking Light I read while on the elliptical).

Breakfast

Breakfast this morning was oh-so-filling. I prepared a bowl of Flax Z Snax butter pecan hot cereal and added 1/4 cup of pumpkin, sweetener and a handful of South Beach Living chocolate-covered soy nuts.
