After a weekend at home with my family, Ryan, Sadie and I were all a bit pooped. After arriving back at our apartment and realizing our pantry and fridge looked pretty bare, it became apparent that a frozen pizza was the perfect way to go!

I bought this AC LaRocco pizza at Chamberlain’s, a local health food store. I was very impressed by the nutrition facts of the pizza and decided it was worth a try.

When I removed the pizza from the box, I noticed it wasn’t very large, but I that was actually a good thing since Ryan and I were splitting it between the two of us.

It cooked up quickly and within 10 minutes we had a crispy, cheesy pizza.

Ryan and I were both beyond impressed with this pizza. The sprouted grain crust was nice and thin and allowed the cheese, chicken, garlic and veggies to take center stage. We’ll definitely be buying this again and I am excited to try the other varieties!

Cookies and Peppermint Ice Cream: An Oreo-Lovers’ Dream

After a long day on the boat yesterday, the family enjoyed kickin’ back, relaxing and watching some football (well, the boys watched football anyway).

While Ryan and my dad were deeply involved in several different games, my mom, sister and I got together to make Ryan’s birthday “cake.” (Ryan’s birthday is not until October 5, but my family probably won’t see him again before then, so the cake from my family came a bit early.)

My mom and sister are well aware of Ryan’s intense love for Oreo’s and he previously raved about a peppermint ice cream and Oreo dessert my mom served once before, so we decided to make that again for the almost birthday boy.

To start we took a half gallon of peppermint ice cream out of the freezer to let it defrost a bit.

We then rounded up a package of Oreo cookies (one roll was already gone due to previous cookie monsters) and dumped the cookies into a big plastic bag. You can use more or less cookies, depending on your love for Oreos.

We then used a meat tenderizer to pound the cookies into crumbs. I highly recommend doing this over a plate as I punctured the baggie and some dust-buster action was required. When I lifted the bag up and crumbs poured out of the holes, the mess  that resulted was not so fun to clean up. 😉

We then poured half of the crumbled Oreos into a loaf pan sprayed lightly with cooking spray.

By now the ice cream was soft and ready to spread over the first layer of cookie crumbs.

We then topped the ice cream with the remaining cookie crumbs and placed the dessert back in the freezer to harden until we were ready to eat.
